Well the snowbirds are mostly gone to the North. Makes things so much easier. I have gone thru 1000 brochures here in Dunedin.

The Chamber of Commerce keeps calling me that they need new brochures. I am in the process of making up new brouchures with just two sides for the fall.

My final tour till fall season is in mid July. Right now it is for 13 people. After that tour I plan on doing some traveling to the north and be back in Florida in September to start the new season.

My plan for the summer of 2019 is already in the works. My sister Gale and I are going to become citizens of Italy. Almost all the paperwork is done but there are just a few more details to be done. I have to admit that Gale did all of the work and it sure helps that she can speak Italian. With citizenship of Italy I am able to work there just like all other Italians that live there. So my plan is to get a summer job in Italy for 4 - 5 months and then spend my winters in Florida

I plan on taking Italian lessons starting in the fall . I look so forward to next seasons of tours and for the summer in Italy.

Hopefully I will see all my friends and family this summer.

Getting myself ready for another tour today. Yesterday I took 2 sisters on tour, one was from Tennessee and the other from Kentucky. I had such a good time with them and I also took then to 2 new places that I found. I think they were full by the 4th stop but no worries, they packed up their leftovers to give to their 87 year old father for dinner. He lives just around the corner from me.

I have another tour today at 2:oo, I think this is Brian's 4th tour. He is bringing family members with him from Cheektowaga NY, where I grew up.

Also going to Publix for my brisket that I am going to make over the weekend, that is after I go to the festival in town that Flanigans is hosting for 2 days

Yesterday's tour was lots of fun. My brother and sister joined the tour along with some suprise guests. At the brewery I had a peanut butter blond beer. My sister Gale who is not a drinker just picked a beer at random and it happened to be the highest alcohol rated beer in the place. We all had a great tour of the brewery, thank you Cory for our tour. The tour yesterday was a very long tour. because my group kept stopping to talk and shop. We also stopped off at the Beatles museum, We did not stay long because of schedule but everyone said they want to go back and look more closely at the exhibit.

This weekend is another festival, All the streets will be closed for the St. Patricks festival. omg more beer. Remember, Dunedin was founded by 2 Scottish brothers. That is why he town is named Dundin which in Gaelic means castle on the hill.
Speaking of St Patricks day, I am going to post my mom's holiday recipe and this is one of my favorites.

Corned beef brisket

3 pound brisket
1/2 cup chopped onion
2 cloves of garlic
2 bay leaf

simmer above for one hour in water

Dump out water and refill with fresh water and boil for another 2 hours.

mix 1 cup of maple syrup
1/2 cup of stone ground mustard
1 tablespoon of horseradish

Put brisket in baking pan and pour half the mixture over brisket and use the remaining for basting. bake at 350 for 1/2 hour

drink one six pack of guiness and enjoy

Had a great weekend in Dunedin. It was the annual Craft beer festival. My friend Storm is visiting me from Canada and we volunteered to pour beer for the festival. It was a great time mainly because we tasted all 8 taps at our site. Very crowded and some great bands. Now I am looking forward to the next festival which is St. Patricks weekend.

Have another tour happening this Friday. I have some space if anyone is interested. This tour will be starting at 1PM as the group needs to end the tour earlier.

On yesterday's tour I decided to try a new brewery that I have never been to. We went to the HOB which means the House of Beer. Rik the owner met us and he proceded to tell us how he started his brewery in Dunedin. I had a blueberry beer. We also had fish spread on crackers and crab salad on crackers. After we drank our beers, Rik took us across the street where they brew the beer. Explained to us the whole process of making beer. Then we all took a sample of the beer of our choice and I had the peanut butter beer. After I go used to the taste I learned to love it. When we had our fish and our crab dip on crackers it reminded me of my mother's clam dip so I want to share this recipe with all of you.

Clam dip

2 6oz cans of marinated clams
1 8oz package of shredded mozzarella
1 cup seasoned bread crumbs
1 stick of butter or margerine
1/2 teaspoon of oregenp
4 cloves of minced garlic

melt butter or margerine in casserole dish. combine all ingredients. bake at 5 uncovered for about 30 minutes when all the cheese is melted.

Serve with ritz crackers

On March 9th I have a tour coming up with just a few more openings left in the tour. Also possibility that March 4th is open. The minimum for a tour is 6 people and I have 2 Canadians that would like to take the tour so trying to book four more for the 4th of March

Yesterday I had a tour of 11 guests. One of the guests is a vegetarian. His name is Floyd and he is from Wisconsin. Because he is a vegetarian I decided to skip the cuban restaurant and try out the Vietnamese restaurant in downtown Dunedin.

I went to meet the owners to set up the tour details and there was a bit of a communication problem. The daughter,Kim spoke perfect english and she told me that her mother and Aunt ran the kitchen and they were both Vietnam refuges.

Everyone in the tour enjoyed the meal very much. One of the things that was served is a seaweed salad. I have never tasted seeweed before and it was excellent. If you can find where to buy seaweed, below is the recipe for a seaweed salad.
Ingredients Nutrition
3⁄4ounce dried wakame seaweed (whole or cut)
3 tablespoons rice vinegar (not seasoned)
3 tablespoons soy sauce
1 tablespoon sesame oil
1 teaspoon sugar
red pepper flakes
1 teaspoon finely grated ginger
1⁄2teaspoon minced garlic
2 scallions, thinly sliced
1⁄4cup shredded carrot
2 tablespoons chopped fresh cilantro
1 tablespoon sesame seeds, toasted



Directions
Soak seaweed in warm water to cover, 5 minutes. Drain, rinse then squeeze out excess water. If wakame is uncut, cut into 1/2-inch-wide strips.
Stir together vinegar, soy sauce, sesame oil, sugar, pepper flakes, ginger, and garlic in a bowl until sugar is dissolved. Add the seaweed, scallions, carrots, and cilantro, tossing to combine well. Sprinkle salad with sesame seeds.

I am feeling guilty that I am sitting here at the table with the air conditioning on while my friends and family are suffering the cold up in Buffalo New York.

Here is one of my favorite soups and it will for sure warm you up.

Stuffed banana pepper soup

Ingredients

1 lb. if ground pork
1 large sweet onion chopped
7 medium/large banana peppers seeded and chopped
3 cloves of garlic minced
salt and freshly ground pepper
1 teaspoon of italian seasoning plus more for serving
1/3 cup of flour
4 cups of chicken broth
8 oz cream cheese softened and crushed
1 cup of milk

in your kettle, cook you meat until browned and cooked thru
and drain the fat,

put in the onion, peppers,garlic and italian seasoning cook until soft, stir in the flour and cook for one minute

Stir in the broth and milk and bring to a boil, then let simmer till soup becomes thicker.

stir in the cream cheese until softened.

season with salt and pepper

ready to serve.
