Wow! I've been getting so much traffic lately! Thank you all so much for coming here.
I wish I could say I'd gotten The Hungry Mermaid off the ground. Out of my mind and into the physical, but alas, it will be a few more years yet. I wanted to do work on it, but on top of other factors, CoViD has caused a halting to progress. I feel the love and I am so grateful for the support by even just receiving views. THM food truck will come to full fruition some day. Just not quite yet.

Thanks to I made my first batch of ceviche in almost 8 years! This one is more complex and I opted to try oysters instead of shrimp (I look forward to trying other sea or lake creatures) With inspiration from a few recipes, I concocted my own:
8 oz canned oysters, broken into chunks
3/4 of the canned oyster juice
1 cup of lime juice
1-2 tbsp lemon juice
3-4 tbsp of fresh-squeezed grapefruit juice
2 tbsp Lemon Turmeric Avocado Oil vinaigrette & marinade
Fresh cilantro
Rough chopped purple onion, green bell pepper, tomato
1 tbsp fire roasted green chile
Couple dashes of sea salt and ground black peppercorn
multigrain fajita-style tortillas cut into fourths, fried in oil with sprinkled Himalayan salt

Freshly picked fiddleheads from Fayal pond trails. I first saw fiddleheads a few years ago at a whole foods store. Well, my friend, Heather pointed them out to me on a walk with our dogs. I was elated! I hadn't tried them yet. Simmered them in water (which is what you have to do...cannot eat them raw) then sauteed them in butter, lemon juice, sea salt, and tricolor peppercorn blend. As soon as I can, I am going back to pick more before the leaves roll out into fern fronds! Hold on a little longer, lil buddies! I'm coming back!

Several years ago, not long after Rudy entered my life, I made my first batch of salsa. *Tonight, I made my first ever batch of guacamole!* Mixed with my grandma Maxine's handmixer (gracias, abuela.. Te amo mucho). I opted not to buy fresh garlic and used garlic powder that I already had. Not sure if I am going to add any of the purple aka red onion I purchased. I did use onion salt (trying to use that up... Not a seasoning I prefer, but it came with the spice rack). Three 🥑, diced tomato, fresh cilantro, lime juice, himalayan salt, cumin, cayenne pepper, canned green chiles. To be eaten with multigrain tortilla chips and perhaps on a burrito or two!

Rudy loves this rice concoction! Brown basmati rice from with a Bleu cheese that contains Juniper berries (picked up from Natural Harvest whole foods grocer, forgot the brand and I threw out the outer plastic wrapping), butter, and avacado. No seasonings.. Didn't need any! 💗

Oy...so no news on the business front. It's on hiatus for now. Was hoping to have the ball rolling sooner, but...sometimes a mermaid encounters a shark, gets her fin caught on a hook, and maybe eats some bad seaweed. So, thank you for your continued support! I will update when there's something to update you with haha!

I've had to put THM on the back burner. When I'm able to, my friend Aprillynn is hopefully going to help me long distance with this business page. Thanks for bearing with me!
It's going to be some time before I get the truck up and running. I'm hoping, hoping in three years at the latest. I've got my credit to fix, grants and loans to apply for, and to learn the biz extensively. I've got to have my ducks in a row! 🐚💙
