The U.S. Forest Service made a slight change-up on us today.

We were originally preparing breakfast burritos for the crew, but somewhere along the way, we were enlisted to provide dinner instead!

And tonight’s dinner is no small order:

300 enchiladas. Three different kinds.
Along with our signature Mexican street corn.

Orders like this are always a balancing act for us. We’re juggling the prep, cooking, assembling, packaging, and getting everything delivered on time- all while continuing to serve our customers in the restaurant.

None of this would be possible without meticulous planning and an incredible support staff. Every person plays a role in making these big orders happen, and we’re so grateful for the team behind us.

It’s a lot of moving parts and definitely a lot of enchiladas, but we love being able to feed our community and the crews working hard in our surrounding mountains.

Congratulations, Justin & Brooke!

Just before coming in to dine with us, Justin asked Brooke a very important question… and she said YES!

Justin chose Dubois to celebrate because he’s found something magical about our small, quaint town, and he believed his now-fiancée would feel the same way.

We are so incredibly happy to have been a small part of such a beautiful milestone in their lives. There’s something pretty special about getting to share in moments like this with the people who walk through our doors.

Congratulations, Justin and Brooke! Wishing you both a lifetime of love, laughter, and countless adventures together.

Just a few weeks ago, we were preparing meals for the firefighters battling the Bear Fire. Now, with the Telephone Fire burning north of Dubois, we’ve once again been given the opportunity to help keep a fire crew fed.

70 breakfast burritos. 5:30 AM pickup.

That meant a late night of prepping after closing the restaurant, followed by a 2am return to the kitchen to get everything cooked, wrapped and ready to go.

There are definitely mornings when the hours catch up with us. Between our daily service, late nights, private functions and everything that happens behind the scenes, we’re tired.

But then you remember who you’re doing it for.

While we’re standing in our kitchen at 2 in the morning, these firefighters are getting ready to head into the mountains and spend the day doing work that is difficult, exhausting and sometimes dangerous.

We may not be able to fight the fire alongside them, but we can make sure they have a hot breakfast before they head out.

Wishing every firefighter working the Telephone Fire a safe shift and a safe return home.

Last night, our sister restaurant, The V Cafe Dubois, had the pleasure of catering dinner for the group attending the 2026 Wyoming High Country Workshop here in Dubois.

And tonight, it was our turn.

On the menu? A build-your-own taco spread featuring carne asada, pollo, and battered cod as protein options. Of course, we brought all the toppings so everyone could build their tacos exactly the way they like them- along with our house-made tortilla chips and salsa to round it all out.

Many thanks to Thomas Caleb Goggans for bringing this wonderful group of artists to Dubois and giving both of our family restaurants the opportunity to be part of their experience.

Two nights.
Two family restaurants.
A whole lot of food, cooking, and gratitude.

The Rolling of a Breakfast Burrito

There’s a little more to rolling the perfect breakfast burrito than you might think.

First, that soft, buttery flour tortilla needs to be warmed just right. A warm tortilla becomes stretchy and pliable, making it easier to fold, tuck, and roll without tearing.

Then comes the good stuff:
- Three scrambled eggs
- Bacon perfection
- Golden fried seasoned tots
- Four-blend cheese

Tightly tucked.
Carefully rolled.
No loose ends.

This morning came with an early report to the kitchen as we wrapped 30 breakfast burritos for the football players, coaches, and managers of Dubois K-12. Homecoming week is here, and we were happy to fuel up the Rams before the big day!

Behind the Scenes…

5am kitchen call. 50 breakfast burritos to prep, pack, and get out the door for the U.S. Forest Service crew working the Bear Fire.

It may be an early start for us, but it’s nothing compared to the long days these crews are putting in on the ground.
