ONE YEAR OF SAINT PASTA.
Today we turn one. Which feels fake, because this place existed for years before it had walls.
Saint Pasta started with no connections, no safety net, and no hometown advantage. Just a stubborn idea, a city that didn’t know me, and a belief that if it was good enough, people would eventually show up.
There were nights with no sleep. Days where “busy” meant checking the bank account and hoping math had changed. Weeks where broke wasn’t a phase, it was the business plan. But quitting never made the menu. (Slide 2 is my account the day our doors opened)
Somehow, you found us. You stood in line. You told your friends. You defended us in group chats. You came back again and again and made this thing real.
This restaurant is not perfect. It’s loud. It’s opinionated. It doesn’t bend easily. But it’s honest. And it’s here because you believed in it before it was proven.
To the regulars, the day-ones, the curious first-timers who took a chance, and the staff who showed up when it was chaos—we owe you everything.
One year in. Still hungry. Still swinging. Still cooking like we have something to prove.
