“CHOOSING A BETTER QUALITY OF LIFE IS NOT A FAILURE”
A seasoned restaurant owner told me this recently. It’s a phrase that I’ve played over and over in mind over the last 6 months.
When the dream of Gallivant was born, over 4 years ago, I envisioned a space that was welcoming and beautiful, a menu that was inspired by travel, where people could experience food and beverage from around the world. The ultimate goal was to blend the “front and back of the house” in a way that was collaborative and entertaining for both staff and customers.
As I walked into Gallivant this morning, tears stung my eyes as I realized my dream came true. We’ve had the honor and privilege of serving thousands of beautiful and delicious meals. We’ve hosted events for groups from all over the world. I have witnessed countless smiles as adults and children taste something for the first time or were reminded of a place they’ve been. We’ve had invaluable staff that have dedicated their lives to the success of this dream. The Gallivant team has grown professionally and personally in ways that makes my heart soar and break at the same time. We’ve become family in the truest way.
Like every restaurant, we’ve faced our challenges. From designing a space from the literal ground up (if you know you know), marketing a new concept, designing a menu that’s inclusive but unique, hiring and training staff, navigating relentlessly rising operational and food costs, cultivating relationship with the community; I’ve had my hand in all of it. I’ve worn more hats than I thought my neck could hold up. I most certainly never thought this would be an easy or simple endeavor. I often joke that I learn every day “what I didn’t know, I didn’t know.” That’s true even four years later. Obviously, there are things I could have done better or learned sooner. But as this chapter closes I can look at myself in the mirror and say I’m proud….
