I made a Farmer’s Table with produce purchased at the Syracuse regional market from local farms for a party last night that was a fantastic alternative to having a full dinner when serving a ton of people. Some highlights were:
Cheese and meats from
House-made hummus with Calabrian chili oil
House-made arugula pesto
House-made basil aioli
House-made focaccia bread
House-made dill pickles and pickled hot peppers
House-made mortadella mouse covered in parmigiano
Everyone had their own idea on what to pair with what, and my fave was making a little sandwich with the salami, basil aioli, and goat cheese on focaccia!

I had the opportunity to cook for a wonderful couple this weekend for their anniversary….I didn’t know them until they reached out about the dinner, but while cooking in their kitchen I learned so much about them and how much they LOVE food and hospitality. Food is such a great way to connect people. It was a great time! (Forgot to take pics!)

Wanted lasagna so made some pasta and a pesto bechamel and added spinach and sausage. Wanted to chill it down overnight and cut it and bake it for that sweet cross section pic but it smelled too good so we ate it immediately!

We fired up my buddy’s wood burning pizza oven and cooked some potato wedges with a roasted poblano ranch dipping sauce. Creamy inside, crispy outside. Made some pizzas too. And maybe a couple of drinks. Awesome night.

In our home, when we want to do something special for someone we cook for them. I was fortunate to have the opportunity to cook for a special lady and her family last night and it ended up being so much fun!
We ate:
*Whipped housemade ricotta on fresh baked focaccia topped with chopped pistachios and Calabrian chili oil
*Housemade goat cheese ravioli with basil oil and pecorino cheese
*Gem lettuce salad tossed with a sherry & honey vinaigrette topped with toasted almonds and feta cheese
*Cioppino cooked with sea bass, littleneck clams, shrimp, and gold potatoes
*Housemade vanilla ice cream with a blueberry lemon sauce topped with a shortbread crumble

Had a bunch of chuck roast left from last night so I made it into focaccia with mozz and some comeback sauce!
