What’s the difference between Gumbo and Etoufee????
Ooo okay, we in Louisiana territory now 😌🔥 love this question.
Both gumbo and étouffée come out of Louisiana and both lean heavy on Cajun/Creole flavor… but they’re built different.
Here’s the real difference:
🥘 Gumbo
Think: soup meets stew.
• Thinner, more broth-based
• Usually made with a dark roux (flour + fat cooked until deep brown)
• Often includes okra or filé powder
• Can mix proteins (chicken + sausage, or seafood combos)
• Served over rice, but it’s got plenty of liquid
Gumbo is layered and complex — smoky, deep, almost dramatic. It simmers low and slow.
🍤 Étouffée
The name literally means “smothered” in French.
• Thicker, gravy-style
• Roux is usually lighter than gumbo
• Typically focuses on one main protein (especially crawfish or shrimp)
• Less broth — more saucy and rich
• Also served over rice
