Rice Paper Dumplings
1lb ground (chicken, pork, whichever you like)5lb ground shrimp
1 cup mixed cabbage finely shredded
2 Stalks green onions chopped
3/4 ginger chopped
White pepper, garlic,and onion to taste
1/2 tsp tamarind

Add all the ingredients, wet your rice paper slightly, fold corners, and roll. Cook on the "crispy" setting in the fryer for 11 minutes!

Spicy Pork Stir Fry
Use whatever veggies you want.. you can use the vermicelli noodles, I prefer the angel hair pasta..

I yse about five cloves
1 cup sausage
1/c pancetta
1/c sugar snap peas
1c stackable cucumbers
1/4c carrots
1/2c bok choy

Stirfry in olive oil set aside, except for the cucumbers.

Cook the pasta aldente, add to the stir fry. Add your sauce

Line juice
Brown sugar
Fish sauce

Add cucumbers to garnish
Sesame seeds oil

1.5 c swerve sugar substitute
I stick vegan butter

1 1/2 cups all purpose flour spooned and leveled

Homemade Pan Pizza

Yesterday, I had a real hankering for some pizza. I decided to make my own. Now, here are the dough ingredients.

Warm Water: 1 and 1/3 cups (100–110°F/38–43°C)

Active Dry Yeast: 1 package (2 and 1/4 teaspoons or 7g)

Sugar: 1 tablespoon (feeds the yeast and aids browning)

Olive Oil: 2 tablespoons, plus more for coating the bowl

Salt: 1 teaspoon

Flour: 3 and 1/2 to 4 cups (438g–500g) of All-Purpose or Bread Flour

Activate the Yeast: In a large bowl (or stand mixer bowl), combine the warm water, sugar, and yeast. Let it sit for 5–10 minutes until it becomes foamy.
Combine Ingredients: Add the olive oil, salt, and 3 cups of flour to the bowl. Mix with a wooden spoon until a shaggy, messy dough forms.
Knead: Tr aer the dough to a lightly floured surface. Knead for about 5–10 minutes until the dough is smooth and elastic. If it is too sticky, add flour 1 tablespoon (If using a stand mixer, use the dough hook on medium speed for 5 minutes).

First Rise: Lightly oil a large bowl, place the dough inside, and turn it to coat in oil. Cover with plastic wrap or a warm cloth. Let it rise in a warm spot for 60–90 minutes, or until doubled in size.

Shape & Bake: Preheat your oven to 450°F–475°F (230°C–245°C). Punch down the dough to release air and divide into two equal balls. Roll or stretch into 12-inch pizzas. Add toppings and bake for 10–15 minutes until the crust is golden brown.

The toppings I added were,

Sausage

Breakfast Quick Quiche

Usually after the holidays I would make this for my family. The kids had fun grabbing whatever veggies were leftover. Throw a tortilla in the bottom of a greased pan, three eggs, some ricotta cheese, and the veggies of your choice!

Onion Naan
Three eggs with cream
8 asparagus chopped
1 red onion
4 sweet red peppers
2 green bell pepper
1/3 c Ricotta
1/2 c sharp cheddar
1 cup Applewood Smoked Bacon Bits
1/2 c mushrooms
1/4 c basil chopped

Assemble and bake 375 for 20 minutes

Pig Candied Crackers.
36 Buttery Crackers.
½ lb. Regular sliced bacon, do NOT use thick cut.
1/3 c Brown sugar, FIRMLY packed.
1/8 tsp Cayenne pepper, optional or use roasted black pepper from the peppercorns.

Preheat the oven to 325°F.
Place parchment or foil on a baking sheet, then place a wire rack on top. Spray rack with nonstick cooking spray.
Line the crackers in a single layer on top of the wire rack.
Cut the bacon into thirds (or fourths if the bacon is very long) and place 1 piece on top of each cracker.

Combine the brown sugar and cayenne, then sprinkle about a teaspoon of the mixture over the top of the bacon.
Bake for about 22 minutes or until the bacon is browned and crisp to your liking (but be careful not to over-brown the crackers).

Loosen the crackers from rack before they cool, then cool completely and allow to harden before serving.

So as we approach 2026.. This will be my 58th year, which was almost ripped away from me. Although I do enjoy a natural (hypersensitivity) lip stain. I left behind foundation, cover, concealer, and powders 25 years ago. I'm proud of my lines, my skin, and the older I get, the MORE I realize how important balanced meals, and hydration are to the body. Stay in balance.. COMPLETELY

10 Slices of Sharp Cheddar Cheese cut into triangles.
Honey Mustard Spread

Bake 10 slices of bacon at 375 for 15 minutes. Cut cheese in half, set aside. Open rolls, and warm for 10 minutes. Spread honey mustard, then add 1/29 cheese, and bacon. Then add Poached egg. Green onion, the remainder of the cheese and lemon pepper to taste.
