Ask any roaster what the single biggest variable in home brewing is, and most will say the same thing: grind size. You can have exceptional beans and perfect water temperature, but if your grind is off, the cup suffers. Here's a straightforward reference to get it right for every method.

Why Grind Size Matters

Grind size controls extraction how much flavor the water pulls from the coffee. Too fine, and water moves slowly, over-extracting bitter compounds. Too coarse, and water rushes through, leaving the cup thin and sour. The goal is even extraction at the right pace for your brew method.

How to Tell If Your Grind Is Off
Bitter, harsh, or astringent? Your grind is too fine, back it off a notch.
Weak, sour, or watery? Your grind is too coarse, go finer.
Brew time running long? Too fine.
Brew time too fast? Too coarse.
Burr vs. Blade Grinders

If you're using a blade grinder, grind size consistency is difficult to control. You'll get a mix of fine powder and large chunks, which leads to uneven extraction. A burr grinder (even an entry-level hand grinder) produces a far more uniform grind and makes a noticeable difference in cup quality. It's one of the best investments a home brewer can make.
