She’s been part of this kitchen since the days of The Woods, and today she’s the hands behind every empanada that comes out of Cimera. Every morning starts the same way: dough from scratch, each empanada filled by hand, and the same care that’s gone into every batch since we opened.⁠

Come see us at Bon Vin's Summer Chef Series, where a different local chef is featured each week. This Friday, it's Chef Geoff's turn, and he'll be serving fresh Anticuchos, traditional Peruvian street skewers.

is one of our favorite spaces in Denver, and we're excited to be part of this week's block party. Along with Chef Geoff's bites, enjoy craft wine tastings and a great community atmosphere. The fun starts at 4:30 PM and goes until everything is sold out, so come hang out, enjoy the evening, and meet Chef Geoff!

Peruvian street skewers, duck & chorizo paella, and ceviche prepared live throughout the evening. DJ Kenny D from 6PM–9PM as the rooftop moves from golden hour into city lights.

Being named Best Rooftop in Denver by Westword means more to us than we can properly put into words.

Every day, we have the privilege of welcoming guests from Denver and beyond to share a meal, celebrate milestones, catch up with friends, enjoy a cocktail, or simply watch the sun set over the mountains. The fact that so many of you choose to spend those moments with us is something we never take for granted.

This recognition is a reflection of the people who make Cimera what it is. Thank you to Executive Chef Geoff, Sous Chef Jon, Sous Chef Wade, and every cook, server, bartender, host, dishwasher, manager, and team member who pours their talent, care, and passion into creating exceptional experiences day after day.

Most importantly, thank you to our guests. Your support allows us to continue pursuing what we love most: creating memorable experiences through food, drinks, and hospitality while always striving to improve and raise the bar.

Just one of the newest additions to our expanded brunch menu.

You already know our Pan-Latin favorites — Tacu Tacu, Papa Rellena with egg, chilaquiles, just to name a few. But we had to make room for a few new standouts.

Starting with this unforgettable avocado toast made with sourdough from and greens from and . It’s fresh, colorful, packed with flavor, and yes… very photogenic.

We’re also adding our signature ceviche with red onion, chili, charred sweet potato, and cancha, plus a simple breakfast for anyone looking to keep it classic.

Join us for brunch every Saturday and Sunday from 11AM–3PM.
