OUR FIRST DAY!
Did you know we opened our very first Miami Fusion Cafe in the middle of COVID?

My best friend and I had spent years talking about how much we missed Miami, the culture, the people, and especially the food. We always dreamed of bringing a little piece of home to North Carolina. Then one day, we found out a little space was available in Denver, and we jumped right in.
We transformed our kitchen into a test kitchen, spending countless nights cooking, tasting, tweaking recipes, and recreating the flavors we grew up with. We were determined to bring a little of the 305 to the 704.
We were set to open in March of 2020, but Covid hit and our opening was delayed to July of 2020. At this point there was no going back, we had invested everything into opening our little cafe.
Looking back, it's incredible to see how one crazy and very spontaneous idea, a lot of faith, and an unbelievable support system turned into four restaurants and a full-service catering company.
That first day was a whirlwind of emotions. We opened wearing masks in what felt like a 180-degree kitchen. The line was out the door, wait times were long, and the excitement was overwhelming. While the day was an incredible success, we had to close early because we sold out! I remember after closing, sitting down and crying like a baby and feeling like such a failure.
Looking back now, that was the day the journey truly began.
It was all made possible because of my incredible family, who has always stood beside me and continue to work alongside me in all of our locations. My amazing husband, who has been my rock through the good, the bad, and the ugly—through the highs, the lows, the exhaustion, the uncertainty, and every crazy idea in between.
It happened because of our amazing staff, who have become family and love and care for our business as if it were their own.
And most importantly, it happened because of YOU—our customers. From our Day 1 regulars who have become family, to those who have driven hours just to visit us, thank you for believing in us, supporting us, and loving us through every imperfection.
We are where we are today because of every single one of you.
