Gracias a Toshi and Yasu Kizaki and the entire Sushi Den family: thank you for welcoming us back and building a celebration whose generosity reaches well beyond the rooftop.

To the host teams, our fellow chefs, the volunteers, and our own crew—gracias for every bit of care behind the chaos.

And to every guest who came hungry and helped give back: thank you for making these two nights about more than what was on the plate.

Tuesday’s Break-Even: Chacolo Brocha / Ixtero Amarillo—Agave angustifolia and Agave rhodacantha, made by the Partida family in Zapotitlán de Vadillo, Jalisco.

After the quiote is cut, Brocha stays rooted for three more years. Ixtero Amarillo, four. Time becomes sugar. The Partidas turn it into guava, lime zest, green mango and dried herbs.

The label follows the law. What’s inside follows the land.

Two agaves. Five generations. Half-priced pours until it’s gone…along with $4 Street tacos from 3-10pm.

Tonight’s Break-Even: Chacolo Ixtero Amarillo—Agave rhodacantha made by Maestro Tabernero Don Macario Partida Ramos in Zapotitlán de Vadillo, Jalisco.

Cooked underground over mezquite and guamúchil. Milled by hand with axes. Fermented for as long as 26 days in volcanic-stone wells. Double-distilled in a Filipino-style still built from copper and hollowed parota wood.

Bright. Fruity. Alive.

Today’s Break Even pour: Rey Campero Pulquero—made from rare Agave atrovirens given to the family by neighbors in Candelaria Yegolé, Oaxaca. This was produced and rested in glass for 48months.

Saline, pine and black pepper meet tropical fruit, mint, jalapeño, toffee and caramel.

Strange. Savory. Singular.
