It is with heavy hearts that we share the passing of our dear friend and team member, Eric.
Eric joined TPC in 2017 and quickly became more than just an employee—he became family. Even after stepping away to pursue a new career, his connection to TPC never faded. He continued to show up for us, picking up weekend shifts and lending a hand whenever it was needed. That was who Eric was—always there when you needed him.
Last year, he played an important role in helping us launch our new Lewisville location, once again showing his dedication and support for the team he cared so deeply about.
His positive spirit left a lasting impression on everyone who had the privilege of knowing him—especially those who worked alongside him at the food truck and experienced his kindness firsthand.
He was more than a coworker—he was a friend, a brother, and a part of our family. His presence will be deeply missed, but his memory will live on in all of us.
We are grateful for the time we had with him, and we will carry his spirit with us always.
To Eric’s family, we are deeply sorry for your loss. Please know the Pickled Carrot family is keeping you in our thoughts during this difficult time.

We will be holding a celebration of life for Eric on April 18th at 10:00 AM at Dignity Memorial - Ted Dickey Funeral Home.
