From October 2022 to February 2025, Cheese & Salsa proudly served 4,377 clients.

Thanks to your incredible support, we were able to give back over $30,000 in donations both monetary and in-kind to multiple nonprofits across Denton County, Dallas County, and even beyond state lines.

After a journey filled with flavor, joy, and community, this chapter with the food truck has come to a close.
I surely didn't imagine it ending this soon, or in silence, but sometimes life shifts in unexpected ways, and we’re called to follow a different path, even when the one we built was paved with passion and love.

Please know: this isn’t goodbye due to a lack of support.
You’ve shown up, lifted me through hard days, and celebrated the good ones right alongside me. I’m deeply grateful for each of you.

As I step forward into a new season, I’ll be pouring my heart into Chukker Café, in partnership with Prestonwood Polo Club , continuing my career as a private chef, and expanding my EQ consulting practice with renewed depth and vision. These next ventures reflect not just my professional growth but personal transformation too.

I haven’t decided yet if this page will be renamed or closed but we can stay connected through where I’ll be sharing what’s next.

Your support has meant the world to me. You didn’t just help build a business; you helped me uplift others, especially the most vulnerable in our community and for that I'm beyond grateful.

My business model may have shifted, but my values stay the same: to help, uplift and nourish. My commitment to serve is a mission that will continue wherever I go.

I completely forgot to post about this, I was busy getting ready and overly excited to have my Daddy and my uncle over helping me out at the Denton Arts & Jazz Festival ✨️🎉

We still have tonight and one more full day tomorrow!!

This year we hace our traditional marquesitas, we brought our Daddy tacos (that Daddy is making) and aguas frescas!

A few months ago, I met the sweetest guy. He came to the food truck asking for a "donation" and I offered him dinner.

He asked me if I could sit with him, and I did. He just wanted someone to talk to and hang out with for a while. He talked to me about his struggle with schizophrenia, childhood trauma and how it has been for him growing up on the streets.

He also talked about how much he wanted to be a famous musician and go on tours around the world. He said music has been his therapy and helped him navigate through his many struggles.

He made me a song that I could record and sell when he became famous. He allowed me to post it and share it on my social media.

Sadly, when I offered to help him get assistance and a safe place to spend the night, he declined and left. I was heartbroken that I couldn't do more for him other than making him something to eat. It wasn't until I saw him again a few weeks later that he said he just wanted a friend.

Some people just want to be listened to, and I am grateful that I was able to do it that time for him. 🙏🏾🫶🏾

We have had a few amazing months at East Side Denton, TX Austin St. Truck Stop covering up for our friends from The Tomato Pizza and they're closer to their reopening!🎉 We are greateful for being invited to keep their spot active while they were getting ready to come back and we wish them the best! To East Side and all the team, we love you immensely and thank you is not a big enough word💞

Cheese & Salsa will be moving out this Tuesday, being Monday our last day operating at that location. We would love to serve you and we will have our merch on display for those who want to snag a har or a shirt!

Sunday we will have a mezcal tasting at Miss Angeline's Denton and we have some tickets available

I have so many things to celebrate and be thankful for, and my dad flying in from Mexico after 4 years apart. I decided this has to be a big celebration, so we are throwing an appreciation party for all of you who have been a part of my journey in the DFW, especially in Denton. We would love for you to join us and meet the person behind our signature "Daddy Tacos". May 27th at The Bearded Monk

I haven't had time to send individual invitations, so if you saw this post, consider yourself invited!

We have a new spot getting ready and we will make the announcement once we have a date. In the meantime, I will be posting over here about our events and how to find us! We have some catering openings for June still so we can be at your events!

I hope my story, my struggle and my tears can help inspire other immigrants to pursue their ventures, not only in USA but everywhere they go.

I come from a family of immigrants. I am third generation lebanese and my ancestors were victims of genocide. Despite seeing their brothers, sisters and parents be murdered in front of them, having to hide for days inside a well, and having the business they worked so hard to build taken away from them, they came back strong and served their community with so much love and without resentment. They learned Spanish, Mayan and all the costumes of this little town in Yucatán, México while re building and growing their business.

Their story is what inspired me to migrate and create my own empire, for the generations yet to come and hoping I can make a difference showing other immigrants that we can make it. Most important, to be an example for my siblings, my cousins, and if life allows me one day, for my kids.

I like to believe the babies I couldn't bring to this world are watching me from up high and proud of what their mommy is doing. 🫶🏾✨️

To all the nonprofits I work with, my immigration attorney Kavi Matthew that was my angel through this process 🫶🏾✨️ Most important, Mamá, Papá, Fabiola, Ariel and Daniela for being my everything. My grandparents, all my cousins, aunts, uncles... My family is my most valuable asset and the ones that bring light to my life.
