**The Anatomy of a Pommes Paillasson.**

The only dish that has appeared on every menu iteration at LUNE.

Chef Mick has spent years refining this process.

It’s also the first project every new cook completes in our kitchen. Every batch is timed. Every step is evaluated. Before touching the tasting menu, they cook the paillasson.

It looks simple.

We are incredibly honored to share that LUNE has received ⭐⭐⭐⭐⭐ from The Boston Globe.

To be recognized by Devra First in such a thoughtful, generous, and beautifully written review is something we will carry with us for a very long time. We are deeply grateful for the time, care, and attention she gave to our restaurant and our story.

But this recognition belongs to so many more people than us.

To every guest who has trusted us with an evening, celebrated life’s milestones around our tables, returned season after season, and believed in what we’re building here on Cape Cod, thank you. Your support has allowed LUNE to grow into something we once only dreamed about and we cannot wait to welcome you back.

Most importantly, this is for our team.

Every cook who peeled potatoes, scrubbed shellfish, picked herbs, and stayed late chasing perfection. Every dishwasher who made sure service never skipped a beat. Every server, who transformed hard work into genuine hospitality. Every farmer, fisherman, forager, and producer whose incredible ingredients make our menu possible.

Whether you’ve been with us since day one or joined us this season, you have left your fingerprints on this restaurant. Every plate, every service, every guest experience is the result of your talent, dedication, and belief in one another.

There is no LUNE without every single one of you.
