Made from scratch, the Chipotle Chicken Burrito from Justin’s restaurant inside The Landing will satisfy.

This packed burrito contains shredded chipotle chicken, cheese, organic refried beans, and greens wrapped in a warm flour tortilla with a side of salsa. It comes with a choice of tots, fries, or side salad. Order online to pick up and go, or order on site to dine in.

Justin’s (restaurant) offers this lunch/dinner item daily Thur-Sat, 11 am – 7 pm; Sun-Wed 8 am- 2 pm. Justin’s also serves breakfast daily starting at 8 a.m.

• The Buzz (coffee & cocktails) Fri-Sat 7:30 am- 9 pm, Sun, 7:30 am-7 pm
• Tandem (to-go items) Fri-Sat 7:30 am- 9 pm, Sun, 7:30 am-7 pm,
• Root 43 Juicery (smoothies & bowls) Fri-Sat 8 am- 5:30 pm, Sun 9 am- 5 pm

Among our most popular, totchos from Justin’s restaurant inside The Landing are LOADED.

A plateful of house-seasoned tater tots comes stacked with house-made chorizo, queso fresco, bell peppers, sautéed jalapeños and yellow onions, fresh avocado slices, house-made salsa verde, cilantro, sour cream, and house-made chipotle lime aioli.

Readers are winners in The Landing’s eyes. Sisters Fiona and Norah were among 80 kids ages 4-14 who took part in the “Now We Are 6” Summer Reading Challenge in July. Each reader who completed the challenge received a gift card to The Landing as part of our 6th anniversary celebration.

Way to go, kids! Look forward to our reading challenge again next summer when The Landing turns 7.

Looking for something light, refreshing, and just right for lunch or dinner? Try the Seared Salmon Salad from Justin’s restaurant.

We plate a 6 oz seared salmon fillet on a bed of locally sourced organic mixed greens with fresh blueberries and strawberries, queso fresco, tomato, cucumber and candied almonds. It’s served with a side of house made strawberry vinaigrette.

Mark your calendar for Carnaval Latino Americano, the first Eats-Education-Engagement event of 2026-27.

This lively event will be held Wed., Sept 16, 5-7 pm. Latines Unides, a student group at Luther College, will prepare and serve:

• Main Dish: Arroz con Pollo, Guacamole, and Chilaquiles
• Dessert: Carlota de Limón
• Drink: Hibiscus (Agua de Jamaica)

Cost is $15/person and $10/students with ID and for children.

Now in its 3rd year, this nd future Eats-Education-Engagement events are supported by Luther's Center for Intercultural Engagement & Support (CIES) and The Landing.
