This vs. That.

At first glance, they’re both just coffee beans. But if you look a little closer, you’ll notice they’re telling two very different stories.

The bean on the left is darker, richer in color, and more evenly developed. That roast development allows the bean’s natural sugars to caramelize, creating the rich aroma, smooth body, and balanced flavor that make you want another sip. You’ll often notice notes of chocolate, caramel, nuts, or fruit rather than bitterness.

The bean on the right is lighter and appears less developed. While that doesn’t automatically make it “bad” coffee, it can produce a cup that’s thinner, sharper, or more acidic, with less depth and complexity. Instead of a rich aroma filling the room, the scent can be much more subtle, and the flavor may not linger the same way.

One of the biggest misconceptions about coffee is that darker-looking beans mean more caffeine. In reality, roast level has very little effect on caffeine. What you’re actually tasting is the difference in how the bean was roasted and how much of its natural character was brought to life.

Coffee is a lot like cooking a great steak—you can’t fix poor preparation at the end, and you don’t want to overdo it either. The goal isn’t to roast a bean until it’s black. It’s to roast it just enough to highlight everything that made it special in the first place.

Sometimes the difference between an average cup of coffee and one you can’t stop thinking about starts with something as simple as the bean itself. ☕

EGS Coffee House is the story of Alfonso, Patricia, and their daughter, Alejandra—a family whose love of coffee is rooted in Puerto Rico and whose dream has now found a home in Texas.

EGS Coffee House was born from a love of coffee that has been part of our family for generations—and from a dream that began more than 12 years ago in the mountains of Puerto Rico.

For Alfonso, that dream became a reality in 2013, when he opened his first coffee shop in Maricao, Puerto Rico. Growing up surrounded by the beauty and simplicity of the countryside, coffee was more than a drink—it was part of everyday life, part of home, and part of the community.

For Patricia, that connection to coffee began even earlier. Some of her sweetest memories are of visiting her grandfather’s farm, where he grew coffee, and waking to the unforgettable smell of freshly brewed coffee at her grandmother’s house at 5 o’clock in the morning. Coffee was woven into family, tradition, hard work, and the simple moments that become lifelong memories.

Those memories never left us.

When our family moved to Texas, we brought our love for coffee, our Puerto Rican roots, and that dream with us. After seven years of working, growing, and building a life we are deeply grateful for, God opened the door and gave us the courage and opportunity to bring that dream back to life.

Today, EGS Coffee House is a dream that belongs to all three of us.

Together, we are bringing a little piece of Puerto Rico to our new Texas home, sharing the coffee, flavors, warmth, and hospitality that have been part of our family for generations.

For us, this is more than opening a coffee house.

It is about honoring where we came from, remembering the people and places that shaped us, being grateful for where God has brought us, and creating a place where people feel welcomed, connected, and cared for.

It is the smell of coffee at 5 a.m.
It is the memory of a coffee farm in Puerto Rico.
It is a dream that began in Maricao in 2013.
And now, it is a new chapter here in Texas.

From our family to yours.
