When we were plotting out the schedule for this round of the Collab Series, Sudova was one of the first restaurants to come up, and the first week of fall was exactly the right time for their exceptional Ukranian cuisine to come to the forefront.

This pizza is perfect for the start of cozy season. We top it with Potato, Pancetta, Caramelized Onion, Confit Garlic Cream White Sauce, 5 Cheese Blend first, then add Farm Cheese, Sauerkraut, Apple Butter, Dill + Chive after the bake.

One of the best parts of collaborating with all of these fabulous restaurants is getting to know the people behind them. Sarah and Scotty have been an absolute delight to work with and the pizza that we came up with is a joy.

Sudova is one of Cincinnati's restaurant gems, having been nominated for a James Beard Award, and it's an honor to be able to work with them. Few dining experiences are finer than a visit to Sudova's cozy patio or dining room, sipping a thoughtfully curated Eastern European white w**e, and tucking into some Halushki or Pelmeni.

This week, we are just taking a quick jaunt from Swabia in Germany right on over to Bourgogne in France!

When we began the conversation with the team from Colette, we looked at a couple of different French bistro classics, but even from the beginning, the team only had one item on their minds - Escargot Pizza.

For the uninitiated or just a little apprehensive, snails on pizza might not sound too appetizing, but if you enjoy garlic, herbs, and bread all in a perfect savory balance, it's gonna blow your mind, homme.

This pizza is a delicious combination of Burgundy Snails, Spinach Cream Sauce, Breadcrumbs, Fines Herbs, Confit Garlic Cream White Sauce and our 5 Cheese Blend.

Open since 2024, Colette has truly become one of Cincinnati's finest restaurants for an upscale - but not too fussy - night out. Like many great (Mostly) French restaurants, it is set on an iconic corner right in the heart of the city, with a view of Washington Park and Music Hall that could be described as downright Parisian.

The atmosphere, the service, the w**e list, and of course the food are all c'est magnifique! The Icelandic Cod dish is not to be missed.

We hope everyone is enjoying the Gemütlichkeit of Oktoberfest this week and the Tuba Baking Co. Jägerpizza! There's still a couple of days to grab one, some Kartoffelsalat, a Laugenbrezel and a delicious Oktoberfest Bier or a Riesling and prost the night away!

In what might be the worst-kept secret in Wayfarer Tavern history, Tuba Baking Co.'s "Surprise Guest" appearance for the Oktoberfest collab week is one we've been excited for for a long time. Shoutout to Drew & Val & Mal & Co. ❤️ They saved our butts on more than one occasion as we were getting our feet under us, including letting us bake focaccia in their awesome oven when ours were busted. They were also our first collaboration partner, for last year's Oktoberfest, and were also part of our original Collaboration Series Lineup. Our friends up the street proved that Dayton, KY could be a dining destination where vision, skill, and high quality food and friendly service could thrive in a great neighborhood.

Nary a week passes where someone doesn't reminisce about a dish or a drink they shared in the biergarten or at the cozy bar. If you never got the chance to try Tuba's delicious Jägerschnitzel or one of their famous Schwäbische Laugenbrezels, now's the time; and if you miss those Swabian delights, this week is for you. Prost!

The Tuba Baking Co. Jägerpizza is all of the best parts of Oktoberfest rolled into a delightful pizza package. Roasted Chicken, Mushrooms, Mushroom Gravy, Confit Garlic Cream White Sauce, are baked with our 5 Cheese Blend and then topped with Pretzel Breadcrumbs, Dill, Chives and a Lemon Wedge to brighten things up.

As a special bonus, Tuba's namesake Laugenbrezels will be available with an assortment of cheeses and mustards, as well as their Kartoffelsalat aka German Potato Salad!

If there's one thing you need to know about Rekas Butchery & Delicatessen in Covington, KY, it is BEEF. Their selection of house-butchered locally-raised American Wagyu is some of the best you'll find in the region. The next time you're stocking up for a grill-out, tailgate, holiday party or any steak-forward event, Rekas should be your first stop. That doesn't mean they aren't well-supplied for many other occasions, including an always-evolving selection of sandwiches, salads, sausages, snacks, produce, and prepared goods. It's a lovely one-stop shop. Unless you count their other location - Wyoming Meat Market - then it's a two-stop shop.

The North/South Shore 3-Way Combo Pizza is the best way to cure your Post-Labor-Day-End-of-Summer-Blues. That was a mouthful, and so is this pizza. Rekas Shaved Wagyu Beef (Think Top Round and Pichana cuts), Cherry Peppers, Horseradish Cream sauce, and creamy American Cheese sauce all go on top of a BBQ sauce base and our 5 Cheese Blend. Oh, and just to take it over the top we're tossing on some crispy, crunchy fried onions.

This pizza is a nod to Rekas ever popular Roast Beef Sandwiches and taking full advantage of their AMAZING locally-raised beef selection as well as highlighting a part of Wayfarer Tavern's pizza DNA, the Boston South Shore Bar Pie.
