Capers in the Kitchen Private chef services featuring Gulf Coast and Mediterranean cuisine, plus favorite recipes and inspiration from our kitchen.

We have two restaurants under one roof! Guido's has a chalkboard menu that changes daily for lunch and dinner. We keep some tried and true staples on both menus, but also enjoy creating new dishes featuring seasonal produce and seafood. Because we make everything fresh and in-house, we do not have a standard set menu. “The Board” allows us to be creative with our food, and gives our guests a taste

Even the pelicans are ready for SEC football! 🏈

Here’s a warm and easy tailgate favorite from my cookbook, Dining & Entertaining Maggie O’ Style.

HOT REUBEN DIP
Serves 8

• 1 (8-ounce) package cream cheese, softened
• 8 ounces deli corned beef, coarsely chopped
• 1 cup shredded Swiss cheese
• ½ cup sauerkraut, well drained
• ¼ cup sour cream
• ¼ cup Thousand Island dressing

Combine all the ingredients in a slow cooker. Cook on HIGH for 2–3 hours or on LOW for 4–6 hours. Serve warm with Triscuit crackers, Melba rye toast or your favorite rye chips.

☘️ Slow Cooker Guinness Glazed Meatballs ☘️Looking for an easy, crowd-pleasing appetizer for your upcoming SEC football watching event? These rich, savory-sweet meatballs use a bottle of Guinness stout and frozen meatballs for ultimate convenience!⏱️ Prep time: 10 mins🔥 Cook time: 3–4 hours on LOW (or 2 hours on HIGH)🍽️ Yield: About 6–8 servings🛒

Ingredients:• 1 (32 oz) bag frozen homestyle meatballs (no thawing needed!)• 1 (12 oz) bottle Guinness stout beer• ½ cup tomato paste• ¼ cup barbecue sauce• ¼ cup brown sugar• 2 tbsp Worcestershire sauce• ½ cup onion, finely chopped• 2 cloves garlic, minced

👩‍🍳 Instructions:Add the frozen meatballs, chopped onion, and minced garlic into your slow cooker.Whisk the tomato paste, barbecue sauce, brown sugar, and Worcestershire sauce together in a bowl until smooth.Pour the Guinness beer and the sauce mixture directly over the meatballs.Stir gently to ensure all meatballs are well coated.Cover and cook on LOW for 3 to 4 hours (or HIGH for 2 hours) until the meatballs are hot through and the sauce thickens.Serve warm with toothpicks as a party appetizer, or spooned over a bed of mashed potatoes for an easy weeknight dinner!Enjoy!

My number-one most-requested Gulf Coast shrimp dish—Southern Pickled Shrimp!

Bright with lemon, onions, capers, and plenty of coastal flavor, it’s a favorite in every season. I serve it for everything from summer gatherings and tailgates to holiday parties—and the platter always comes home empty.

Some recipes simply never go out of season. 🍋🦐

Throwback Thursday! There use to be a popular saying “ Real Men Don’t Eat Quiche”.

Personally I’ll eat quiche for any meal. I made this today based on what I found on hand, fresh broccoli, portobello mushrooms, tomatoes, and my home state famous Vidalia Onions.

Several years ago, a sad kitchen mishap forced me to retire a very similar favorite. At last, I have this beautiful red replacement—and I’ve promised her that I’ll be much more careful with my cooking methods from now on.

My copies of Julia Child’s The French Chef Cookbook and The Joy of Cooking have certainly been well loved over the years. Their worn covers tell the story of countless recipes, family meals and time spent in the kitchen.

Some cookbooks aren’t simply books—they become trusted companions.
