In a rich beef stock, I simmered mini meatballs, Gnocchi, tomato, garlic, vegetables, herbs and seasoning. It is finished with Parmesan cheese. TODAY'S FEATURED SOUP
TURKEY WILD RICE
Wild rice soup has surely earned its place as Minnesota’s unofficial-but-should-be-official dish. Especially since it’s basically a wild rice hot dish, and nothing is more quintessentially Minnesotan than that. I start with our house-made poultry stock and simmer onion, celery, carrot, spinach, herbs, turkey meat and yes WILD RICE. Oh, by the way wild rice isn’t actually rice. It’s the seed of a grass that thrives in marshes in northern Minnesota, which means that it isn’t really a grain. However, I’m calling it a grain. If it looks, quacks and acts like a grain and has all the nutritional properties, then it’s a grain. I thicken it with a roux and finish it with heavy cream. This soup screams comfort!

THIS WEEKEND'S FEATURED SOUP:
ITALIAN BROCCOLI SOUP
This Italian Broccoli Soup is just like all the Nonna's in my neighborhood use to make! This soup is made WITHOUT ANY CREAM, so in my opinion it’s a lot better for you than most broccoli soups made with heavy cream and stringy cheese. It truly is comfort food that's good for you! Grandma recipes are the best, not only do they taste amazing, but they bring back so many memories of the food that they were making for you. I simmered broccoli in poultry stock and believe me there is no “al dente” treatment here either. The broccoli is “cooked to death” in the best possible way. I then add onion, celery, carrot, herbs, seasonings, and simmer. Then I add orzo pasta, and Parmesan cheese. When it is served it is drizzled with extra virgin olive oil. As the Italian Nonna’s would say to me,“mangia mio figlio”. (Eat my child)

SCALLOP BACON CHOWDER
This baby is chock-full of scallops, this thick, creamy classically flavored chowder showcases the mollusks’ silken texture and the bacon, which is smoky but is mild enough not to overpower the other flavors. Scallops, onion, celery, carrots, garlic, potatoes and herbs are simmered in a rich clam broth. Thickened with a roux and finished with heavy cream. YUM!
