Life Lately ✨

Life has been life-ing.

The last several months have brought anxiety, depression, unexpected losses, hard conversations, and moments where I honestly questioned what was next. I've had to learn how to keep showing up for myself even when I didn't feel my strongest.

I've also experienced success, growth, and reminders that I'm capable of more than I give myself credit for. The weight loss is something you can see, but the real transformation has happened behind the scenes in my mindset, my healing, and the way I choose myself.

One of the biggest victories has been finding my motivation and ambition again. After so many life changes, I found myself disconnected from parts of who I am, including my passion for food and my purpose as a chef. Slowly but surely, I've been finding my way back and reigniting the vision for Let Me Feed Your Soul. What once felt distant is starting to feel possible again.

I've learned that growth isn't always a straight line. Sometimes it's resting. Sometimes it's grieving. Sometimes it's rebuilding from the ground up. And sometimes it's simply deciding not to quit.

Through every setback, every lesson, every tear, and every victory, I've kept pivoting. Different plans. Different perspective. Same purpose.

Still healing.
Still evolving.
Still trusting God.
Still building.
Still cooking.
Still becoming.

The pivot game is on point. The story isn't over. This next chapter is personal. ❤️✨

I need some more taste testers for these vegan entrees. It's $10 a plate with 2 entrees! I need honest reviews whether it be by text or video.

🚫Meatless Monday... with the 🧀‼️

Spinach & Artichoke Twice Baked 🥔

Ingredients::
Texas Size Potatoes
About a 1/4 cup Heavy Cream
A little butter
Some frozen chopped spinach (make sure to squeeze access water out)
Drained Artichoke
shredded gouda, blue cheese, and feta
chopped red onion, chives, and green onion
Good ole seasonings
Olive oil

Coat potatoes in olive oil, salt, pepper
Bake potatoes for 45 mins on 450° or 60mins at 375° flip potatoes half way mark (make sure to pierce the potatoes)
Grab a saucepan add frozen spinach and artichoke cook till tender (drain access water)
Add heavy cream and half the cheese to the pot let cook to a simmer then turn off
Once the potatoes are done(cut oven temp to 350) cut the top off and scoop the inside of the potato into a bowl (careful not to break the skin of the potato)
Add the spinach snd artichoke mixture, seasonings, and the rest of the cheese leaving enough to top
Place back in the oven for 10 to 12mins
Garnish with green onion
