When I first opened 7 Friday Sushi, there was this short kid who would come in with his friends all the time. They'd buy drinks, grab some sushi, and spend their days wandering around the Town Lake boardwalk area.

One night, after we had already closed, he came in limping. He had stepped on a nail while running through a grassy field. I gave him some sushi and a drink and told him, "Be careful out there. Whatever you do, make your parents proud."

After that, I never saw him again.
Fast forward four years.

A lady named Van called and wanted to surprise her son with a sushi boat for his graduation celebration.

Meet David.

The first thing I noticed was that he was now towering over me. The second thing was the impressive collection of medals hanging around his neck. The one that amazed me most was learning he got NROTC wrestling scholarship.

Think about that for a second—a small Asian kid taking on opponents and earning a scholarship through hard work, discipline, and determination.

Even though I hadn't seen David in four years, I couldn't have been more proud of him. You could see that same pride on the faces of his family and friends throughout the entire celebration.

Thank you to David's family for thinking of us on such a special day. It's moments like these that remind me why I love what I do. Watching kids grow up, chase their dreams, and achieve incredible things is truly a blessing.

Congratulations, David. Hopefully one day I'll get the chance to watch you wrestle in person. ❤️

What an amazing way to kick off Teacher Appreciation Week! We prepared and delivered 110 poke bowls by 10 AM, and it was truly a pleasure to meet and serve the wonderful staff at Warner Elementary.

We are chefs. We create. And at the end of the day, we’re only human. I knew that if we could accomplish this, it would be a stepping stone for even greater sushi cake creations in the future.

Thao requested a Sushi King Cake, and after searching everywhere for a mold that would arrive in time, I came up empty. So we improvised—using a couple of shaped cake molds to create our own oval king cake form (not perfect).

This cake features two cooked sections and two raw sections.
The cooked side includes scallop, crawfish, shrimp, salmon, house sauces, and masago. Top layer torched.

The raw side is layered with spicy tuna, spicy salmon, and poke, finished with our new amazu sauce.

Both sides are packed with beaucoup portions of protein and fresh vegetables—bold, flavorful, and over the top.

✨ Beginning of 2025

For the first time, our sales were down —and it honestly scared me. New restaurants opening up everywhere in our community and just as fast closing. This pushed me to roll out ideas I’ve been working on.

The last quarter gave me hope. Closing New Year’s Eve with 47 party trays, three 4-ft boats, and two bridges reminded me what we do best.

I’m beyond grateful for my incredible team—truly a staff answered through prayers.

One of the greatest joys of running a restaurant is serving the people who serve our community. This one is especially close to my heart.

Meet Thanh Tran, one of my childhood best friends. Watching his journey in the healthcare field—through sheer intelligence, dedication, and experience—has been truly one in a million. He’s now leading a team in the Neuro and Endovascular Center at Houston Methodist Sugarland. The only comprehensive stroke center in Fort Bend County. I couldnt be more proud of him.

I already know this is just the beginning of everything he’s meant to accomplish in the medical industry.
