There’s been a lot of talk in the Texas BBQ community about rising brisket prices and some places considering taking brisket off the menu.

We understand it. Beef prices are high, and running a BBQ business isn’t getting any cheaper.

But here’s where we stand:

Texas BBQ is brisket. Period.

It’s the smoke rolling out of the pit before daylight. It’s that black bark, rendered fat, smoke ring, and a perfectly smoked slice of beef.

At Have Mercy BBQ, we’re focused on catering, private events, and preorders—and brisket will continue to be at the heart of what we do.

Prices may rise. The market may change. We may have to adjust along the way.

But brisket isn’t leaving our pits.

Whether you’re feeding 20 people or 200, planning a private event, or just preordering a whole brisket for the family, we’ll keep doing what Texas BBQ was built on.

The weather is going to cool down soon and we plan to be back around 10/24.

New location and a few new items on our menu. I hope to see you all soon and stay tuned for more updates.

Also, keep us in mind for Holiday orders and caterings through the holidays. We are so ready to get back in the saddle.

This was the last thing my Dad made for me that I can recall. All his life he made things, sang and played guitar. He was a fantastic artist and musician and there wasn’t anything he couldn’t fix. Call your Dad today and if you have the chance to visit him do so. Once they are gone for good you’ll wish you had.
