The rim isn’t garnish. It’s technique.

Every Mango Paloma gets its tajín rim rolled by hand — glass in the chili-lime salt, one turn, no shortcuts, no pre-mixed shaker. It’s a small step most bars skip. We don’t.

Tequila, mezcal, bacanora, sotol — the whole agave family lives behind our bar, and every drink gets the same attention this one does.

🌵 Pollo del Desierto

Bold, sour, unapologetic. Our Pollo del Desierto is bathed in a guajillo-tamarind sauce deep chile heat meeting bright tamarind tang topped with toasted panela cheese and sesame, served alongside arroz rojo. This is Sonora on a plate. 🔥

🇲🇽 Viva México 🇲🇽

Today, we celebrate the spirit of Mexico the courage, strength, and determination that shaped our history and continue to inspire generations.

Independence is more than a date in our history. It is a celebration of our roots, our traditions, our culture, and the pride we carry wherever life takes us.

From our beautiful Sonora to every corner of Mexico, our heritage lives through our food, our music, our families, and the stories we share around the table.

At Juncal, we are proud to honor those roots and share a piece of Mexico with our community.

¡Que viva México!
¡Que viva nuestra cultura!
¡Que viva nuestra gente! 🇲🇽

Happy Mexican Independence Day from all of us at
