For last Friday’s Full Moon Feast, we served trout from Frontier Trout Ranch (https://frontiertroutranch.net/), right here in the San Luis Valley.

We picked them up directly from Kermit at his place, where the water stays around 55°F year-round. As long as he keeps that fresh water circulating, the ranch can stay operational through the year.

The trout could hardly have been fresher — when we picked them up, they were still flipping and flopping!

Here are a couple of inside-and-out photos of Frontier Trout Ranch, with Kermit in the second. We love knowing the people and places behind the food we serve, and bringing something raised so close to home straight to the table at Sage’s Hearth.
