Biryani has never really understood the concept of “just a little.” 😉

We’ll begin with Hugel Gentil Alsace White paired with shared platters of Chili Shrimp, Punjabi Samosa Chaat & Chicken 65.

Then, Au Bon Climat Pinot Noir paired with Peshawari Chicken Korma, Lamb Barra Kebabs & Coconut Vegetable Curry, with rice and a bread basket for the table.

One of the questions I’m asked most often is, “𝙒𝙝𝙖𝙩 𝙨𝙝𝙤𝙪𝙡𝙙 𝙄 𝙤𝙧𝙙𝙚𝙧?”

This time, I thought I’d answer that personally.

In this video, I share the story behind two dishes I think deserve a little more attention—the Chicken Tikka Flatbread and our Kasundi Salmon Tikka. One was created to share around the table, the other is one of my favorite lighter dishes, full of flavor and prepared with techniques that reflect the inspiration behind Chaska.
