A nod to Oktoberfest season, from the Caves kitchen.

Each year, as Bloktoberfest approaches at our sister restaurant Block 15 Corvallis, our kitchen joins in with a seasonal brunch special of its own.

Meet the Pork Schnitzel Benedict—a crispy, breaded pork tenderloin cutlet layered over an English muffin and topped with two perfectly poached eggs and fresh hollandaise. Stone-ground mustard and capers bring a bright, savory bite, with crispy fried potatoes and fresh fruit alongside to round it all out.

Crispy, rich, tangy, and very brunch-worthy.

Available now during brunch for a limited run across multiple weekends, leading into Bloktoberfest, September 25 & 26, under the big tent outside Block 15’s Downtown Pub.

🍷 A new Oregon Pinot Noir joins our w**e list.

Now pouring at Caves: 2024 Haden Fig Willamette Valley Pinot Noir.

A thoughtful expression of Oregon Pinot Noir, this vintage brings together fruit from four Willamette Valley vineyards—near-equal parts Cancilla, Croft, and Freedom Hill, with a smaller share from Torres Hill just outside Dallas, Oregon.

Fruit from these predominantly sedimentary sites comes together in a beautifully structured w**e with bright acidity, silky texture, and notes of red and dark fruit.

Available now by the glass or by the bottle at Caves.

A seasonal favorite makes its return to the evening table. ✨

Our Seafood Vol-au-Vent layers wild-caught Gulf shrimp and delicate bay scallops in a saffron-Parmesan cream sauce, tucked into a warm, flaky puff pastry shell. A crisp salad of shaved fennel and red onion brings brightness, while herbed crème fraîche and crispy capers add a savory, briny finish.

Rich yet balanced, rooted in classic French technique, and back for another season.

Late summer brings something new—and the return of a seasonal favorite.

Brown Butter & Miso Bucatini joins the evening menu with white miso, roasted sweet potato, lacinato kale, Jimmy Nardello peppers, toasted Oregon hazelnuts, Pecorino Romano, and microgreens. Rich, savory, and balanced with a subtle sweetness.

And with Oregon peach season at its peak, Peach & Frisée Caprese returns. Local peaches, creamy burrata, organic frisée, and shaved fennel are finished with citrus-basil vinaigrette and a strawberry-balsamic reduction.

Late summer has found its way to the brunch table.

Our Oregon Peach Crêpes pair delicate French crêpes with amaretto mascarpone, sweetened whipped cream, fresh Oregon peaches, and toasted almonds—a seasonal expression of one of summer’s best ingredients.

Also returning to the menu is our Ham & Egg Strata, a savory layered bake of shaved ham, egg, Gruyère, chives, sherry, crème fraîche, and Parmesan, served alongside crisp fried potatoes.

Our new Roasted Pork à la Estival features sustainably raised Salmon Creek Farms pork from Twin Falls, Idaho, paired with a crispy potato latke, parmesan-chardonnay cream, charred sweet corn, and a bright zucchini & Jimmy Nardello pepper salad.

Our new seasonal Twice-Baked Soufflé is light, savory, and full of vibrant seasonal ingredients. Warm goat cheese and herb soufflé is finished with a pistachio-basil cream sauce, marinated grape tomatoes, parmesan breadcrumbs, crushed pistachios, and fresh microgreens for a dish that's as beautiful as it is satisfying.
