My Cheesecake Repertoire:
1. Caramel Irish Cream
My first creation and, according to my mom, Miriam, “the best cheesecake ever”: Lucious Irish Cream vanilla bean cheesecake topped with a rich combination of Irish Cream and sweetened sour cream, and smothered in caramel buttercream frosting, with a shortbread cookie crust
2. White Chocolate Raspberry
Decadent white chocolate raspberry compote cheesecake covered with silky white chocolate ganache and fresh raspberries, with a shortbread cookie crust
3. Pumpkin
Pumpkin cheesecake with lemon zest, cinnamon, nutmeg, ginger and a touch of cardamom, garnished with spiced whipped cream, with a snickerdoodle (cinnamon cookie) crust
4. Chocolate Ganache Pumpkin
Same as Pumpkin, but generously covered with spiced chocolate ganache, with a chocolate wafer cookie crust
5. Cinnamon Cafè Latte
Rich espresso cheesecake gently layered with creamy vanilla bean cheesecake, topped with cinnamon whipped cream, with a snickerdoodle crust
6. White Chocolate Macadamia
My most indulgent creation: roasted macadamia (in my opinion, the king of nuts) white chocolate cheesecake, topped with smooth white chocolate ganache and halved macadamia nuts, with a macadamia shortbread cookie crust
7. Maple
Sweet maple syrup vanilla bean cheesecake smothered in caramel maple topping, with a maple leaf cookie (not homemade) crust
8. Quintuple Chocolate
The chocoholic’s dream: chocolate cheesecake with mini-chocolate chips— which gives it a subtle crunch—drenched with chocolate ganache, garnished with chocolate whipped cream, with a chocolate wafer cookie crust
9. Birthday Cake
Cake flavored vanilla bean cheesecake, topped with a thin layer of confetti cake (the only thing I make from a mix), iced with vanilla bean buttercream, with a shortbread cookie crust (includes writing in icing “Happy Birthday” and the name of the recipient)
10. Blueberry Lemon
My second favorite: Sweet and tangy, blueberry and lemon compote cheesecake, topped with lemon zest flavored sweetened sour cream and fresh blueberries, with a shortbread cookie crust
11. Hazelnut Chocolate Chip
Creamy toasted hazelnut cheesecake with crunchy chopped hazelnuts and mini-chocolate chips, smothered with whipped cream, and topped with chopped hazelnuts and mini-chocolate chips, with a hazelnut shortbread cookie crust
12. Chocolate Ganache Strawberry
Three cups of strawberries in one cake: Refreshing strawberry compote cheesecake, covered with smooth chocolate ganache, topped with fresh strawberries, with a chocolate wafer cookie crust

Candy-based cheesecakes usually incorporate the actual candy in the recipe—My “candy bar” cheesecakes are intended to look and taste like the real thing
13. Chocolate Peanut Butter Cup

My favorite: a thin layer of chocolate cheesecake, topped with a thick creamy layer of no-bake peanut butter cheesecake, covered with chocolate ganache, including ridges to make it look like the candy, with a chocolate wafer cookie crust
14. Chocolate Caramel Peanut Nougat Candy Bar
(inspired by Snickers®)
A thin layer of chocolate cheesecake, topped with a thick layer of fluffy peanut butter nougat no-bake cheesecake, smothered with caramel and peanuts, covered in chocolate ganache, with a chocolate wafer cookie crust—baked in a square pan
15. Chocolate Coconut Almond Candy Bar (inspired by Almond Joy®)
A thin layer of chocolate cheesecake, topped with a thick layer of no-bake cream of coconut and shredded coconut cheesecake, topped with almonds, and covered with chocolate ganache, with a chocolate wafer cookie crust—baked in a square pan
16. Peppermint Bark
For the Christmas season: Creamy white chocolate cheesecake with a slight crunch from bits of peppermint candies, covered with peppermint candy white chocolate ganache, with a chocolate wafer cookie crust—baked in a square pan

17. Roasted Garlic Pesto Grilled Chicken
For those without a sweet tooth (or someone who wants their meal and dessert to be cheesecake), it’s exactly as it’s named, topped with pickled red onions, with a panko crust—thigh or breast meat

Like a creamsicle with a twist: Orange zest cheesecake swirled with vanilla bean cheesecake, spiced with cardamom, topped with candied oranges, with a shortbread cookie crust
19. Mint Chocolate Chip
Refreshing mint chocolate chip cheesecake, flavored with homemade fresh peppermint syrup, smothered with fluffy chocolate mousse and covered in fresh mint leaves, with a chocolate wafer cookie crust
20. Peanut Butter & Jelly
Rich peanut butter cheesecake (crunchy or smooth), topped with grape jelly no-bake cheesecake, covered with a beautiful white chocolate mirror glaze, with a peanut butter cookie crust—I grew up with grape jelly, but any fruit jelly can be substituted
21. Cosmopolitan
For adults only: Tangy orange, lemon, lime and cranberry cheesecake topped with citrus vodka-infused whipped cream, garnished with fresh cranberries, with a shortbread cookie crust
