My signature Salmon Coulibiac! Faroe Island salmon layered with mushroom duxelles, wild rice, and dandelion greens, wrapped in a squid ink crêpe and encased in golden puff pastry.

Quenelles of sole with sauce américaine.
A light and airy fish dumpling made from finely minced fish (in this case, sole, though pike (brochet) is commonly used), mixed with dairy, then gently poached and baked. The quenelles are served with a sauce (américaine) that is a variation of the classic Nantua sauce — traditionally made with crawfish, but in this case, i used lobster. The sauce is creamy, made with a cognac and fish stock base.

One of my favorites: eggs en gelée – a combination of ham, a runny poached egg, parsley, tomato, and thinly sliced gherkins, all encased in a chicken stock aspic.

And in my opinion is perfect with a classic Negroni.
