Chatel Farms raises cattle specifically for the kind of marbling and tenderness that our kitchen demands. The Wagyu Baseball Cut and the Prime NY Strip come from their operation — bred, fed, and finished with a standard that we can trace and verify.

This is the same sourcing philosophy we apply to everything: know where it came from. Know who raised it. Know that when a guest asks, we can answer with specifics, not marketing language.

Every wood burns differently. We chose ours on purpose.

North Georgia hardwood — oak and hickory, sourced locally — burns slow, burns even, and releases a smoke character that becomes part of every steak that passes over our grill. We use logs, not chips. The difference matters. Chips flare and fade. Logs sustain. They give the fire time to do what it needs to do, and they give the steak time to absorb something that can't be replicated any other way.

The smoke isn't a garnish. It's the first seasoning the steak receives — before salt, before heat, before the sear. It's the reason guests tell us our steaks taste different. Because they are different. The wood made them that way.

The kitchen gets the applause. The front of house makes sure it lands.

Will Morrison is our Lead Floor Captain — the person who sets the tempo for the room every night we open. His job is the one guests feel without seeing: the timing of your courses, the read on when you need another moment, the quiet assurance that everything is handled before you think to ask.

Great hospitality isn't about speed. It's about knowing when to be present and when to disappear. Will has a gift for both.

His favorite part of this job? Watching a first-time guest realize this isn't just dinner. It's an experience they weren't expecting.
