It’s been 3 years without our founder, Randy Larson. We miss him every single day and carry him with us in all we do. Once in a while we hear, “things have changed without him”, of course they have- but it’s not the menu or food.

He was here twice a day every single day but Christmas. He had a personality that could make most situations better and a one of a kind sense of humor. He was thoughtful, kind, intelligent, loyal and the most generous person I have ever known. Randy was well read, well spoken, nonjudgemental and extremely fair.

Without ever speaking about it we received a beautiful gift, the chance to carry on his legacy. Randy wasn’t one to sit for long and it never felt right to talk about the what if’s…legends never die. But here we are trying to fill some impossible footsteps and carry forward to keep Monica’s going.

Some things have changed in 3 years, we miss him and his friends hanging out. We miss him visiting with customers and making everything better by handling it all with grace. We miss Randy’s leadership, jokes (good and bad), sportsmanship, charisma and ability to stay ahead of the curve.

Encouragingly I used to tell him “I never want to do this with anyone but you” and I know Sal felt the same. There was safety with Randy, he always knew what to do. Alas, it’s been 3 years of us pushing through on our own.

There have been days filled with grief and overwhelming sadness that only visiting with customers could fix. There has been frustration of learning all that only Randy did and sincere wonderment of how he did it. Handling the things we never had to hasn’t come easy. But Sal and I are resilient and Monica’s is too.

People ask “How long have you been here?” often, and I giggle. I respond “Here at this location since 2009 but across town since 2001”. Most of my adult life and so many years of Sal’s (Airliner days?) have been wrapped into this business.

It has been such a gift and honor to stay open without him but this date, July 15, will never pass without a mention of how much he’s truly missed. We speak his name often and love to visit about him, if you’d like. As the years go by what he created will remain and we are proud to operate Monica’s (BYU too) for 25 years and counting.
