Nino on opening a hotel in Kabul, Afghanistan 🇦🇫, where everyone spoke Farsi, “This was going to be hard. In the hotel, there were only male employees, tall men with scars, either from dueling or from the national sport, buskashi. It is played on horseback🏇 with the aim of gaining possession of a headless calf, and to become a national hero🏆 by doing so was each man’s goal! The willing staff loved the challenge of creating a spic-and-span European-style spa hotel. I was proud of them.

In 1969 a waiter’s pay was a meager fourteen dollars 💵 a month, and people worked hard for it. In no time, we had the sharpest staff in all of Kabul. Now the tourists and businessmen had a hotel where the staff greeted them in English, and staff members looked smart in their stylish uniforms. On the front line I put youngsters who wanted to learn the Queen’s English.🫅🏻We made weary travelers feel at home by creating an oasis in the desert. Although it first appeared in a 14th-century cookbook,📕 lasagna actually dates back to ancient Greece.🇬🇷 In fact, the Greek word, “laganon” for flat dough sliced into strips, is believed to be the origin of the word, lasagna. We’ve been making our Classic Lasagna Bolognese since we opened our doors in 1989. It’s been recognized by the food media and by everyday online reviewers as one of the best versions of the dish in Miami.

Nino on catering to a different breed of diner in Brussels🇧🇪, “The Sheraton Hotel, where I worked as the food and beverage director, was the newest in Brussels, and very American in its mentality. The top three floors were apartments with fully equipped kitchens and were for families facing relocation to Brussels. Most countries had three ambassadors, one for the government and one for the CEEC [Committee of European Economic Cooperation] and one for NATO respectively. Therefore, there was a significant demand for temporary apartments. The traffic of CEOs, country presidents, and diplomats through Brussels was astounding. The hotel apartments and rooms were always full. The hotel was heavily frequented by state dignitaries. Henry Kissinger held many conferences in the private banquet rooms, and so did the American vice president, Spiro Agnew. One thing I particularly remember is the hotels main restaurant, Les Comtes de Flanders (The Counts of Flanders], very chic, Cristofle silverware and crystal glasses. But there had to be a dog menu!🐕 Belgians were very dog friendly, and to bring a dog of a certain size to a restaurant was perfectly normal. We had plastic or ceramic plates of different colors and sizes for dog food. The customers ordered different items from this menu for their dogs. And the menu changed regularly, too. It’s 90 degrees in Coral Gables at the moment. Seems like a great time to talk about a cool, crisp salad. This colorful work of art is our popular Tre Gusti Salad! 🥗 The name translates to “three flavors.” They are, in this case, arugula, red radicchio and endive with some tomatoes 🍅 for good measure. Simple, fresh and the perfect complement to your next meal at Abbracci.
