Our Story

I am from a small town in Southeastern Pennsylvania, called Slatington, and moved to Colorado Springs in 2013 to wrestle and attend the United States Air Force Academy. Throughout my time in Colorado, one thing I have noticed is the lack of Polish restaurants or food options. I come from a long line of Polish coal miners, so I grew up with one tradition I couldn’t leave in PA, pierogi. My Great Baba’s pierogi recipe has been passed down for 3 generations, and is a staple as a hearty meal after a long day in the mines, and as a treat around the holidays. As a child, I got to enjoy our Great Baba’s pierogi recipe whenever I wanted, all I had to do was give my Baba a call. I learned everything I know from my Baba(pictured above) and I have been helping her make pierogi since I was a little kid. If my Baba was babysitting me and she already had scheduled to make pierogi at her church, she would bring me along to help the other women. In fact, every Christmas Baba would make a spread of traditional fried pierogi with fillings such as cabbage and onion, or lekvar and sometimes even orange marmalade as a treat! While my time with the Air force has come to an end, one thing didn’t – the need for pierogi in Colorado. Our vision for the business is to make Baba’s Pierogi LLC into a Food Truck and offer our Polish favorites through a mobile concept. In the meantime, we will be conducting business online, in-person, and catering.
