Smoked, Beer Battered & Fried Chicken Thigh • Romaine • House Cesar Dressing • Tomato • Red Onion • Parmesan Crusted Grand Finale Sourdough

Chef Kyle’s right hand man and kitchen manager Jake asked if he could put a chicken Cesar sando on special for you all this week. Of course we weren’t going to make your run of the mill chicken Cesar sandwich. We had to put our own twists on things. It features our smoked, beer battered and fried chicken thigh. So right out of the gate we’re already ahead of the game. We scratch made the creamy Cesar dressing 🤤 Then, pun intended, the “Grand Finale” to it all is their local made sourdough crusted on our griddle with parmesan. We didn’t think their sourdough could get any better. Then we crusted it in parm, and… 🤯

Story time…

It’s Ryan’s one year workaversary at Coopersville Brewing Company this week. Chef Kyle HAD to bring back the sando that threw gasoline on an already smoldering friendship. A little over a year ago, Chef Kyle had this sandwich and feature created for Ryno BEFORE he ever thought they would be partners here at OEP and CBC. The week that Chef decided to run the feature started out as any other week. Collabing with a mutual friend, Ryno, from another brewery, Pigeon Hill Brewing Company, on a dope and delicious food feature. By the end of that Monday, Coopersville Brewing Company was looking for a new head of beverage and brewing. 😳 The following day, CBC connected with their friend Ed over at City Built to ask for some advice working through a head brewer transition. Well, Ryno’s partner, Steph, happens to be a long time member of the City Built team and family. It did not take long for Ed to recommend a connection to Ryno to Jeremy at CBC. CBC was shocked to hear that bringing someone into the CBC fam as talented and respected in the West Michigan brewing world as Ryno is, would be possible. Jeremy and CBC jumped at the opportunity and asked Ryno to meet that night. They did, and had an amazing conversation. Ryno returned that Thursday to eat THIS sandwich and for a follow up conversation. It’s safe to say the sandwich and CBC vibes impressed Ryno. The following day, that Friday morning, Ryno officially accepted the position of head of beverage and brewing at CBC. 🥲

This legendary sandwich literally helped lure in a Ryno! How could it not?? Think a bacon wrapped and brisket stuffed jalapeño popper, but in sandwich form on locally made sourdough bread🤯

The week is off to a bit of a slow start. We’re hoping The Ryno will lure some of ya’ll here and turn things around for us🤞

Chef Kyle is back in his Cajun bag this week. Those Grand Finale hoagie rolls are also SO good it’s hard not to use them when you have them on hand. Combine those two things and you’ve got another bangin’ feature this week.

Awwww yeahhhh!!!! It’s Blueberry Haven Dinner week! You knewChef Kyle would bring the heat, but man 🥵 Thin sliced, perfectly cooked beef. Fresh, in season local veggies pickled to perfection. Melted smoked Gouda cheese. A hoagie roll made just for us from Grand Finale in Grand Haven and Spring Lake. Finished off with Blueberry Haven’s Honey Mustard sauce 🤌 Then there’s that au jus to dip it and send it over the top 🤤

There are only about 15 seats left for this Sunday’s Blueberry Haven private five course dinner, so if you’re contemplating going, you’ll need to get your tickets, cause this is when they start flying. The link for tickets will be in the comments. If you can’t make it to the dinner then you NEED to get in here for this sandwich.

CHEF KYLE… FOR CHEF OF THE YEAR?!?

R***e West Michigan has been a well respected lifestyle magazine here in West Michigan for a long time now. They’ve helped to define all things top notch in arts, entertainment, food, hospitality and so much more. Their annual “Best Of the West” issue highlights top individuals and businesses across a wide array categories. This years issue is due out in July, and your boy… our boy… our partner and friend, Chef Kyle is a finalist for Chef Of the Year!!!

It’s an incredibly well deserved honor. He’s locked down our menu with staple items, but continues to keep it fresh with regular updates and new items. He is consistent with his weekly features that showcase his wide ranging culinary knowledge and highlight his talent and creativity. He leads the charge when we partner with Coopersville Brewing Company to close the taproom down to host private multi course dinners with beer pairings. He strives hard to source from local suppliers where we can whenever possible. The list continues, but you already know if you’re a fan of us in any way.

“Chicken Mole”

It’s Cinco De Mayo week, and Chef Kyle stayed in the Mexican pocket… kind of. He put together a classic Mexican mole over our house smoked chicken thigh. Then paired that up with his spin on a classic Puerto Rican rice and beans dish that features beans and potatoes in a rich tomato based broth with white rice. Individually everything is great. When you combine them all and eat it together though… 🤯

Coopersville Brewing Company also has two of their Cinco De Mayo drink features still flowing. There’s the vodka based margarita, the Carmelita-Rita. There’s also the Mole Motor Oil which is a dark lager with chocolate, cinnamon and habanero.

A couple of perfect pairings with this weeks feature. As always though, these feature are limited. They’ll be here till they’re not, so come get some while you can!

Chef Kyle decided to take a trip to Germany with this weeks feature and we are here for it. A pounded thin pork loin, crusted in a house made rye breadcrumb mix, sitting in a smooth and creamy sauce and topped with some warm red skim potatoes… SO GOOD.

🚨 MENU UPDATE DAY 🚨

The seasons are a changing and that means Chef Kyle is making menu updates. This is one of the smaller menu updates since Chef Kyle joined the fam. Here are the highlights from this round of updates:

• No more Smokehouse burgers. All burgers are smash burgers now and we upped all burgers with an extra ounce of meat.

• We brought sliced tomatoes onto the line and added them to the American Burger and the Michiskogee Patty Melt

•New items:

- Cowboy Quesadilla
- Cowboy Burger
- Honey Mustard Fried Chicken Sando
- Roasted Brussel Sprout Salad
- Texas Caviar (new side)
- Honey Mustard BBQ (new sauce)

• New separate kids menu w/ added grilled cheese and a kids wing basket (4 wings).

Those are this seasons updates. We can’t wait for you all to try some of these new items!
