Some say bluefin tuna belly, or o-toro, is the wagyu of tuna. Well, we think that wagyu is the bluefin tuna belly of beef! This incredible bluefin, coming fresh from Red’s Best on the Boston fish pier, is our star of the moment! Expertly cut and graded, each piece of toro we get from reds is a beauty to behold- and tastes even better than it looks! This luxurious ingredient is relatively difficult to get your hands on without restaurant connections, so we’re thrilled to offer it as the first course on our local bluefin tuna and tomato tasting menu! Here, the tuna is cured on kombu seaweed before being lightly grilled to caramelize, chilled, and sliced. Dressed with a blistered cherry tomato ponzu, a few dots of yuzu kosho aioli, kombu oil, lemon zest, Maldon salt, scallions, and black truffle. Garnished with a couple perfectly blistered sungold tomatoes, tulsi basil blossoms, and some of our favorite variegated nasturtiums! Come and get yours!!!
