Call it whatever you want, but in Trenton the sauce goes on top. 🍅 The tomato pie is a New Jersey original, and the folks at spots like Papa's and DeLorenzo's have been making it the same stubborn way for over a hundred years. Cheese first, then that bright ladle of crushed tomato right on top, baked until the edges blister.

There is a whole science to it. The crust stays crisp because the cheese protects it from the sauce, and every bite tastes brighter than the pizza you grew up ordering everywhere else. Trenton people will argue this is the purest form of pizza ever made, and honestly they have a strong case. 🔥

It is the kind of food that makes you understand a place. One bite and you get why people drive across the state just to sit in a worn vinyl booth and eat a pie the way their grandparents did.
