Our Culinary Director, Nick Ellison, traveled to Japan for access few ever get: an intimate, invite-only Wagyu auction reserved for a small circle of the world’s top restaurants.

His journey led him to Miyazaki, a region known not only for producing some of Japan’s most celebrated Wagyu, but also for its citrus-growing heritage. There, a select number of cattle are placed on a special diet that incorporates local citrus, producing a rare expression of Miyazaki Wagyu sought after by chefs and collectors around the world.
