The Plan for Ruben's
Lots of folks asking what the plan is, so I thought I would explain as much ss possible to answer as many questions as possible
General:
The East door will be the main entrance. What used to be the front door will be closed
The bar upstairs will be closed permanently. That space will be available for private party and functions
There will be gates installed at both entrances. Those gates will be locked at closing time every day.
We will carry a beer license, but no liquor license. Wine will be BYOB with a corking fee for each table.
Phase 1:
Kitchen rebuild
Electrical upgrades
Permits
Vender setup
Customer flow changes
Cleanup
Soft opening
Initially, we will open for lunch 10:00 - 2:00. This is to test the work flow, kitchen capabilities, staff training, etc. The menu will be very similar to the current menu at the West Piont shop. Customers will order at the counter, sit down anywhere, and we'll bring your lunch out. There will be a side salad and full salad option for the salad bar. Bowls will be provided accordingly at check out for a single visit to the salad bar.
Drinks will be self serve with a cup provided at the counter at check out.
After establishing some rhythm, we will open for phase 2:
Add dinner times 4:00-9:00 Thursday-Saturday and a Sunday opening 11:00-5:00.
Thursday - Saturday dinner menu will consist of fresh Seafood, grill oysters, catfish dishes, fried baskets, and steaks.
Sunday menu will be 3- 4 fixed blue plate specials like 1/2 smoked chicken plates, country fried steak plate, fried/Blackened Catfish plate, seafood boil platter.
Phase 3 will be adding a deck, crawfish cooking gazebo, boat dock and more nights open for the dinner menu.
