Have you ever experienced a bite that hits all your senses at once?

We think our Phuchka does just that! Imagine this:

👁️: Your server brings out a dish of 2 golden, cratered Puri shells about the size of your favorite California Roll. As you peek over the top, you see a dollop of white foie gras pâté, translucent apple, and a bright green mint leaf nestled inside.

👃: Mint hits your nose first, lifting towards sweet, pickly apples. Then the Pani’s aroma wafts over to sour, fruity tamarind, and kala namak, that sulfurous black salt with mineral edge.

👂: The moment your teeth break through the Puri you hear a sharp crackle. The Pani rushes in and you’re left with a crunch that reminds you of your favorite bowl of cereal and milk.

🤌 : Your palate perceives cool and silky foie against soft potato and chickpea layered with quick snaps of pickled Granny Smith. The Pani water lingers cold on your tongue, a little tart and tingly.

😋 : The bright tang of tamarind, sweet Ohio cider, and kala namak meets the rich, buttery foie gras and the tart apples in the filling, balancing each other out in one explosive bite.

🧠 : (yes, we think memory counts as a sense). You understand (at least a little bit) what it’s like to attend Bengali gatherings all your life.

Someone hands you a Phuchka and you pop it in your mouth immediately (you remember that time you hesitated and ruined your favorite going-out shirt) and a single burst of rich, sweet, tangy refreshment greets you to start the celebration!

His suggestion? Come hang with us at our Grillside Counter for a front-row view of char, grill, sear, and chefs pretending they’re not sweating while they spiel our Tourist BBQ plate in front of a powered fire in the middle of June.

Bob’s also eager to reveal which Piece of Agni we’re offering with our Summer Wine Club: house-churned chai ice cream. 🍨

What makes an idea Seriously Fun? 🐒🐏

Usually, we start by asking a simpler question:

What excites you?

A flavor you grew up with? A texture you keep craving? A feeling you want to share?

Recently, and got together to bounce around early ideas, unfinished experiments, and “what ifs” weird enough to be worth chasing.

That’s how brought us Dual Onion Rings.

The goal: Interlocking onion rings. 🧅💍

The attempts: Caramelized onion rings, chicken rings inspired by , and liver-and-onions onion rings.

The results: The caramelized onion version tasted great, but was hard to execute. Chicken worked more easily, but felt less exciting. Liver pâté had more spark, but oozed out in the fryer.

Did every version work?

No, but that’s part of the fun.

We think good ideas usually get better by failing first. That’s what collaboration, testing, and feedback are for: figuring out what to change, what to keep, and fuel for where the idea can flow to next.

Welcome (স্বাগতম)!

You walk into Agni and your host hands you a cup before you have time to wonder how to be here.

You take a sip and Cha Manao greets you: refreshing Thai tea with coconut sugar and lime (dairy-free because everyone is invited).

In Bengali households, this অতিথি দেব ভব-style start usually goes more like:

Have you eaten?
Can I get you something to drink?

Then, before you can get too far into saying, “Oh no, I’m fine,” somebody is already pouring the tea and setting a snack in front of you anyway.

So while our welcome drink may change with the seasons, sharing something the moment you walk in stays put (Ma would not let us do it any other way).

How do you translate a lifetime of Pohela Boishakh memories into one dinner?

We think it’s a little like trying to explain why one bharta is never enough: possible, but much easier to understand once you’re at the table, passing plates, comparing favorites, and tasting the story for yourself.

This year’s menu gave us the chance to share dishes that light our fires, from Panta Bhat and Labra, to Dal Joya would welcome you with in her home, mezban-inspired and -ed goat, and plenty of mishti to end things the way all Bengali celebrations do.

Food like this comes from people who teach you, correct you, feed you, call you back, lend you their ceramics and tupperware, and tell you exactly how to do it better next time (though a 📸 and some sweet Soan Papdi may have softened their critique).

Joya helped us make Apple Chutney and Ras Malai, and reminded us that standards are standards; Avishar still remembers getting in trouble for picking sub-par veggies, so yes, the Fried Okra had a lot to live up to. 😅😆

Our team turned those memories, notes, and expectations into 8 courses, with Joya and Uncle Tridip giving thanks between bites and insisting they were too full to continue.

So now it’s our turn to give thanks: to Joya, for helping us shape the menu and celebrate with us; to our team, for bringing such care to the table; and to you, Columbus, for showing up hungry and curious! ❤️‍🔥

This just in: Although we are no longer accepting reservations for our Bengali New Year dinner, you still have a chance to dine with us tonight (4/15)!

In the spirit of Pohela Boishakh and sharing abundance, we are welcoming a limited number of guests to our bar for last-minute walk-ins.

🇧🇩 If you snag one of these limited seats, you’ll be joining us for our special Bengali New Year menu.

Instead of our standard à la carte offerings, we invite you to come hungry for waves of snacks, multiple mains, and many mishti, with leftovers to boot!

PLEASE NOTE: Our kitchen kindly recommends these bar seats for guests ready to enjoy the menu as it is being served. While we enjoy accommodating dietary allergies, preferences, and restrictions, we typically ask for advance notice to provide the best substitutions possible!

We took a field trip to to break down some goats for our Bengali New Year event (👀) and left feeling inspired by all of the future possibilities!
