White chocolate Anise-Orange Biscotti in the case today!!
Inspired from a chocolate line we produced years ago. They were all made from the different coffee we imported, with their regional liquors . Our top seller back then was the Colombian Anise orange, infused with aguadente Cristal from Colombia.

If it was already filled when you pointed at it, you were in the wrong bakery. 🧁

This is the one thing there is no debate about, and every family in South Philly, the North End and Bensonhurst enforced it the same way. The shell goes soggy within the hour. A real counter fills it while you stand there, and you carry that white box home flat on your palms like it is a legal document.

After that, the arguing starts. Ricotta or cream, and the answer is ricotta and everyone knows it. Chocolate chips, acceptable. Candied fruit, controversial in a way that has ended friendships. Pistachio on the ends is Sicilian and correct. Powdered sugar goes on last or not at all. 😂

And here is the thing about arguing over pastry. It is never really about pastry. It is a way of saying my grandmother did it this way and my grandmother mattered. That is why nobody backs down and nobody actually gets hurt.

You can tell everything you need to know about a bakery by whether they fill the cannoli when you order it or before you walk in. 🥐

The shell is fried dough. Dough that has been fried is crisp for a limited window and then it is not, because ricotta cream is wet and the shell is porous and physics is not sentimental about tradition. A shell filled at seven in the morning and sold at four in the afternoon is a soft tube of pastry holding cheese. It is not a bad thing exactly. It is just not the thing.

The places that got it right kept the empty shells stacked in a tray in the back and filled them in front of you, and there was always a little bit of a performance to it, the bag squeezed from both ends, the ends dipped in pistachio or chocolate chips or candied orange depending on where the family was from. Sicilian bakeries were usually the strictest about this, which makes sense given where the pastry originates.

And every one of us has a place we still measure everything else against. A specific counter, a specific person behind it, usually gone now, and nothing since has been right. 🙄
