They're layered in a pot—often over sliced potatoes or lamb chops—and slow-cooked in a rich broth of olive oil and fresh lemon juice until tender. They are typically served cold or at room temperature as an appetizer (meze) with a squeeze of fresh lemon or a side of Greek yogurt.
