Want to know what’s cooking at Ivywild? Matthew Schniper talked to Mike & Amanda Bristol about their (finally) finalized plans for a refresh starting Sept. 21st!

Here’s a peek:

👉 The Principal’s Office rolls out its fall cocktail menu and expands its coffee game to add mornings and nights this month

👉 Ivywild Kitchen continues serving burgers, fries, and favorites, but with a refreshed menu from our new Executive Chef Paul Ryan

👉 Bluebird Breakfast opens Oct. 5th, serving up simple, hot breakfast favorites like eggs, french toast, burritos, and bowls

👉 Yellow Brick Bake Shop also opens Oct. 5th with breakfast pastries, desserts, homemade muffins, baked goods, and fresh bread

👉 The Restless Chef arrives Feb. 2027 and will bring a rotating menu inspired by a different culinary region or style each quarter. Decent Pizza will go away for now to make room for this one (Decent, we know you will be missed 🫶)

👉 Gold Star Bakery moves across the street to the (new!) Blue Star

👉 The Bristol Pub, Salad or Bust, Axe & The Oak, and Odds & Ends will remain the same

Meet Paul Ryan, Ivywild School's new Executive Chef! Paul is the guy behind the scenes making sure the food at Ivywild is delicious, dialed in, and always worth coming back for. He’ll be developing menus, leading our kitchen teams, keeping things tasty and consistent, and helping shape what’s next for food at Ivywild.

👉 Tell us a little about yourself and how you found your way into the kitchen.
My grandmother introduced me to cooking. When I was a kid, my parents went on an extended vacation and I stayed with my grandma. She made fresh donuts, delicious roast beef, and I had brownies straight from the oven. I was 9 years old and that’s when I fell in love with making fresh food. I spent much of my career in the Bay Area, and here in Colorado Springs I've worked at Oro in the Mining Exchange Hotel, P.F. Chang's, and Tapateria.

👉 What excites you most about taking the culinary reins at Ivywild?
It’s that I get the creative freedom to come in and put everything I’ve learned and everything I’ve fallen in love with when it comes to food on four different menus. I get to experiment with the palettes of people in Colorado Springs and see what people like. It’s eclectic with everything from burgers to BBQ to baked goods. Ultimately, I want to make food that looks good and tastes good.

👉 What can people expect from the food as we head into this next chapter?
It’s going to be flavorful and exciting, and people can expect to experience my unique take on well-known dishes. We’re working hard to build on the traditions at Ivywild while also bringing in new ideas. I hope to blow people’s minds with a kaleidoscope of flavor when it comes to the food.

👉 Anything else you want to add?
I want people to come to Ivywild and explore what we have here. I want people to try everything and tell me what you like and what you don’t like because I’m not here for me, I’m here for the community. The biggest thing is I want to make people smile when they take a bite of my food.

Dust off your boots, grab your dance partner, and head to the Ivywild School Gym for country dance nights with lessons and open dancing led by instructors.

Join us August 11th and then every 2nd Tuesday for Line Dance Night!

👢 6pm to 7pm Line Dance Lessons
🎶 7pm to 10pm Open Dancing
📍 Lessons are 16+
📍 Open dance is all ages welcome

FREE to attend

The Gym Bar will be open all night serving alcoholic and non-alcoholic beverages.
