A lot of restaurants have closed down this year. To be honest, there's been times I thought we might be one of them. Rising food costs, utilities, license fees, credit cards cost us 3%, and the list goes on.
It's hard. And it makes being here everyday with a smile hard. I know those moments, I own them, am overly accountable (as I am told), and also infinitely grateful for the grace of those I am lucky enough to share space with.
We're all works in progress, if we're putting in the work. That's why I marketed this business as having an "evolving menu" for so long, and will be going back to that soon. That's what this is, because that's what I am. An evolving human, chef, boss, son, cousin, friend, and so many other things.
But, I think, most of all, resilient, adaptable, resourceful, and accessible (on a good day). Those are the things the sunflower mean to me, why we build recipes around the seeds for the daily menu, and the stalks, bulbs, and petals for special menus, and why I have that tattoo. It took me 20 years between my first one and that one.
We've always been here for you (as much we have been able, since we're a small staff of human beings) and we are infinitely grateful that you have been here for us. What a cool thing we get to do with our limited time here. Thank you π€π»π€
