Why do hot beverages cool you down?

This happens because the moment the hot liquid makes contact with the body's temperature receptors, the brain tells the body to produce more sweat. This sweat then cools on the surface of the skin, reducing the sensation of us being too warm and ultimately, making us feel cooler.

Here's the breakdown for flavor profiles:

EAST TIMOR DUCURAI
You can roast it anywhere from very light to very dark. In a light roast (City+), it has a crisp green grape flavor, with a little bit of dark chocolate in the aftertaste -- more tart than sweet, but very nice and easy to drink. In a Full City+ roast, it has wonderful coffee-taste. Thick bodied, sweet, smooth, great coffee, and a hint of that tart flavor of grapes twinges the sides of your tongue right at the finish. In a dark roast, (30 seconds of 2nd cracks) it really could pass for a nice clean Sumatra Mandheling -- low acid, syrupy body, chocolatey, sweet. It's not bitter and it's bursting with flavor. At the extreme dark roast, it's one of the best Italian roasts I've ever had and I can drink it without cream because it is so sweet. I mean, the flavor is still going to be described as smoky, roasty, really dark coffee - but the sweetness and lack of ashy taste make it a great choice for extreme dark roasts.

BRAZIL HONEY MINAS GERAIS
Offering some notes of toffee, caramel, and milk chocolate, along with a full body.

PANAMA BOQUET BERLINA ESTATE
It has some red apple, juicy, sweet, citrus, caramel notes.

MEXIO VERACRUZ
There's some chocolate and some orange in there as well.

GUATEMALA HUEHUETENANGO COFFEE KIDS PROJECT
Strong chocolate taste, like a chocolate bar melting in your mouth. But it also has a berry flavor which I love. Hints of cherry and floral notes. It's got really good full and creamy mouthfeel.

KENYA MWERU
You may notice flashes of flavor that include grape jam, blackberry, red wine, peach, and grapefruit. It is a sophisticated and wonderful mug of coffee.

ETHIOPIA GUJI SHAKISO NATURAL
The coffee is bright, lots of sweetness, and is fruity. We are noting tastes of wild blueberry, floral, graham cracker, slight citrus. Clean finish, no defects.

Getting some beans from East Timor, Guatemala, Ethiopia, Rwanda, Tanzania, Sumatra and Peru.

Peru is decaf.
