Episode 2: “No Quest Marker”
I’ve set a goal that I have no real way to track. It either happens or it doesn’t. There’s no trackable progression to how the story is evolving on our road to the Michelin guide. The only progression is personal and that should make you all very happy. What’s next for us is high quality consistency.
For a while, we’ve struggled to find a real identity, trying to mold the culture within Colorado Springs to my own. Also molding together, the art and the business. For a while, it almost seemed impossible.
We’re at a point now, where my menu has a strong identity. I’ve been able to tie in much of my childhood memories and have evolved them into modern comfort food dishes, that everyone can enjoy.
We’re working closely with sourcing our produce through them with suppliers mostly being local and/or organic. Still working to find the right flower tortillas for our burritos. Our corn tortillas, “El Milagro” are locked in and as delicious as ever. These tortillas really do bring me a sense of euphoria through vivid memories of my childhood. Glad I could share them with yall.
Finally, speaking on our consistency we are working closely with to ensure that our burritos there are holding up to our quality standards. It’s taken some time, but we’ve arrived at a point of pure bliss. The burritos are exactly what they should be and we’re very happy about that.
This business is becoming a community event and we’re slowly, but surely becoming truly ingrained into the city. Just a chubby Mexican boy from Chicago making a name for himself in a new city. Thank you, Colorado Springs.
