 When I first started in the barbecue business, I hired Max to come out from Texas to teach me how to cook. Max was the pitmaster at world-famous Franklin Barbecue. After that he worked at pretty much all of the great barbecue places you can think of - including Austin’s Interstellar Barbecue, who recently celebrated a Michelin star for the second year in a row. Just like in those old days, I still have a burning passion to create the best barbecue in this part of the country, if not the whole damn country. We get Max back this weekend and with him, I am looking forward to crafting some magical plates of BBQ.
