🐓🐮The Cluck N' Bull🐮🐓
You guys!!! I've been talking about doing this sandwich for like...three years.
This isn't my creation—it's my recreation of one of my all-time favorite sandwiches from my college days.
I went to school in a little bitty town in Oregon, and my favorite place to eat was Villa Roma C**k N' Bull. I didn't name it, y'all! 😂 And no matter what else was on the menu, I always ordered their signature sandwich: The C**k N' Bull.
Slow-roasted beef and chicken piled high on buttery toasted bread with house-made honey mustard...it was absolutely divine. Add a basket of waffle fries and a peach Italian cream soda, and that meal got me through many long nights of studying.
I've honestly never stopped thinking about it. It's such a simple sandwich, but it's just so, so, SO good.
Every time we talked about bringing it to the restaurant, I got hung up on the beef because serving roast beef as a lunch special can be tough to keep on budget. Then Eric reminded me we had a bunch of brisket to use up, and it was like...DUH! Why hadn't I thought about using our leftover smoked brisket all along? It helps us use every bit of that delicious brisket and means we get to have beef on the lunch menu.
So while this isn't an exact copy of the original, it's our Q version, The Cluck N' Bull: smoked brisket, smoked chicken, buttery toasted bread, and of course, honey mustard.
