¡Hola, Todos! It is another Seasonal Saturday here at the restaurant!

As we reach the end of May, we are also coming to the end of our strawberry season at Sabor. I want to send a huge thank you to our friends at O’Rourke Family Gardens for supplying us with such incredible, fresh strawberries and rhubarb over these last few weeks. 🍓🌿

Because the season is quickly wrapping up, this weekend and early next week will be your last chance to get your strawberry rhubarb fix from us for the rest of the year! Whether it's the seasonal cocktails or our desserts, come grab them while you still can.

But as one season ends, a new chapter begins! Next week will bring a new dish... well, not a completely new dish per se. I'll be bringing back a familiar favorite from the kitchen, but this time, we are taking it to the next level by preparing it with a completely different breed of pork. 🐖🔥

Well, sometimes you think you’re completely in the zone, and then you go back to check on the oven only to realize you forgot to turn it on! It’s just one of those days, but as always, we press on! While these might have been a little late to the party, they are finally done and ready for you.

For this week’s Seasonal Saturday, we’ve whipped up another big batch of our signature strawberry rhubarb syrup—using the freshest strawberries and rhubarb sourced from our friends at O’Rourke Family Gardens—and I’ve put together an entire cocktail lineup to showcase those flavors!

We decided to shake things up this week! Instead of the traditional pie, we are serving up beautiful strawberry rhubarb galettes. They have that same rustic, farm-fresh flavor you love, just in a different form.

Nothing beats a Saturday morning at the Bloomington Farmers’ Market! 🍓✨

We couldn’t ask for a better start to the weekend than being back among all these wonderful local treasures. Every time we visit, we leave with so many new ideas and fresh inspiration buzzing in our heads!

You might notice a familiar theme today—the strawberries and rhubarb are back in the starring roles—but we’ve put a little twist on them this time around. We are so excited to get back to the kitchen and start creating.

It is a beautiful day here in Colfax, and we have a lot cooking in the kitchen to make your Thursday even better.

🍔 The Chorizo Burger: Round Two
First off, a huge thank you to everyone who stopped in yesterday to help us test out the new Chorizo Pork Burger. We’ve received some great feedback so far, but we want to make sure we really nail this dish before making any permanent decisions.

If you didn’t get a chance to try it yet, you’re in luck! We will have the Chorizo Burger available today and Friday, or until we run out of ingredients. Come by, grab a bite, and let us know what you think.

🌮 New Arrival: The Al Pastor Torta
All that experimentation gave me an idea for a brand-new Torta that perfectly balances sweet, spicy, and savory flavors. Introducing our new Al Pastor Torta!

We’ve layered this one with:

✨ Pineapple & Habanero Curtido (for that signature kick)

¡Hola, familia! It’s time for another Test Kitchen session here in Colfax!

🍔 The Latest Creation: Chorizo Pork Burger
I’ve been back in the kitchen experimenting with some bold flavors, and today we’re testing out a brand-new burger that brings a little heat and a little sweet to the table.

What’s on the plate:

The Patty: A juicy Chorizo Pork blend, seasoned to perfection.

The Melt: Topped with creamy Swiss cheese.

The Sauce: Slathered with a rich, house-made garlic aioli.

The Twist: A pineapple habanero curtido for that perfect spicy-sweet crunch.

The Bun: Served on a pillowy, toasted brioche bun.

We are always looking for ways to mix things up at Sabor de México, and this one is definitely a contender for the regular rotation!
