Oh my goodness!! You all must try this Amazing Cake!!!

ARIZONA PECAN POKE CAKE

Cake Base Ingredients
To start with the foundation of your cake, you’ll need:
• 1 box of yellow cake mix
• 3 large eggs
• 1 cup of water
• ⅓ cup of vegetable oil
• ½ cup of toasted Arizona Pecans, chopped
These components will create a moist sponge that’s ready to soak up all that delicious flavor.

Creamy Filling Ingredients
Next, let’s focus on what makes this poke cake truly special. You'll need:
• 1 can (14 oz) of sweetened condensed milk
• 1 cup of whipping cream
• 1 teaspoon of Disaronno
•
This combination makes for a scrumptious filling that seeps into the cake, providing that irresistible Arizona Pecan taste.

Whipped Cream Topping Ingredients
To top off your Arizona pecan poke cake, you’ll need a fluffy layer that’s easy to whip up:
• 1 cup of heavy cream
• ½ cup of powdered sugar
• 1 teaspoon of Disaronno
Whip it all together until fluffy, and you’re in for a treat!

Toasted Arizona Pecan Topping Ingredients
Lastly, add an extra crunch and flavor with:
• 1/2 cup of toasted Arizona Pecans, chopped
• ½ cup of toasted Arizona Pecans, halves
• 2 tablespoon of melted butter
• Caramel sauce for drizzling- I used premade Ghirardelli’s!
These toppings add a delectable finish, making your cake truly irresistible.

Preparing Arizona Pecan Poke Cake

Prepping the Baking Dish
Let’s prepare our baking dish. A 9x13 inch pan works great for this recipe. Preheat your oven to 350°F (175°C). Then, grease the bottom and sides of the pan with a little butter or non-stick spray to avoid any sticking mishaps later.

Toasting the Pecans
Next up is toasting the pecans, which really elevates their flavor. Grab a skillet or a baking sheet and toast pecans with butter over medium heat for about 5-7 minutes. Stir them frequently to prevent burning. Did you know that toasting nuts can increase their flavor profile significantly? It also makes your kitchen smell amazing! Be sure to let them cool before adding them to your batter.

Mixing the Cake Batter
Now it’s time to gather your ingredients for the cake batter. You'll need:
• 1 box of yellow cake mix
• ½ cup of vegetable oil
• 4 eggs
• 1 cup of milk
• 1 teaspoon of Disaronno
• ½ cup of toasted Arizona Pecans, chopped
In a large mixing bowl, whisk together the cake mix, eggs, milk, and oil until smooth. Add ½ cup of those toasted pecans for a bit of texture right into your batter. Once everything is combined, it should be a smooth, pourable consistency.

Baking the Cake
Pour your batter into the prepared baking dish and spread it out evenly. Pop it into your preheated oven and bake for about 25-30 minutes, or until a toothpick inserted into the center comes out clean.

Making the Creamy Filling
While your cake is in the oven, let's whip up that delicious filling! You’ll need:
• 1 cup of heavy whipping cream
• 1 cup of sweetened condensed milk
• 1 teaspoon of Disaronno
In a bowl, beat the heavy cream until it reaches stiff peaks. Gently fold in the sweetened condensed milk and Disaronno. This creamy mixture adds a luscious layer of flavor that pairs beautifully with the cake.

Poking Holes and Adding Filling
When the cake is done, remove it from the oven and let it cool for about 10 minutes. Taking a wooden spoon handle or a fork, poke holes all over the surface of the cake. Aim for about 20 holes, as this is where your creamy filling will seep into to create the delightful layers that define our Arizona Pecan poke cake. Pour the creamy filling mixture over the cake, making sure it fills the holes well.

Chilling the Cake
To let the filling set and the flavors melt together, cover the cake with plastic wrap and refrigerate it for at least 2 hours. If you have time, overnight is even better!

Whipping Cream Topping
Just before you’re ready to serve, whip up a simple topping. You’ll need:
• 1 cup of heavy whipping cream
• 1 teaspoon of Disaronno
Beat the heavy cream until it’s fluffy, and fold in the Disaronno. This will create a perfect light topping for your cake.

Assembling the Final Cake
Once chilled, remove the cake from the fridge and spread the whipped cream topping over it. For a stunning finish, sprinkle the remaining toasted pecans over the top and drizzle with caramel sauce. Slice and serve this divine Arizona Pecan poke cake to your friends and family, and watch them go back for seconds!

This Cowboy Cookies recipe comes straight from my Hall County 4-H Jr. Food Show cookbook from the early 1980s, and it has been a treasured family favorite ever since. My sweet friend, Kristi Bailey Wagner—one of my dearest and oldest friends from elementary school—made this for our food show, and it has held a special place in my heart (and kitchen!) ever since. Every time I bake it, I’m reminded of those simple, joy-filled days and the friendships that have stood the test of time. Made even better with fresh, homegrown Arizona Pecans, it’s a little taste of tradition we still love to share today. 🌵
