We Ain't no fast food resturant! We are a Barbecue Joint! We do brisket, pork ribs, chicken, pulled pork, sausage, turkey our Massive DINO Beef Ribs! Home Made cobblers and sandwiches. All our hand made sides are made fresh every early morning, potato salad, cole slaw, pinto beans and mac and cheese. Come and check out our newly remodeled building located 9,000 feet above the stress level in beautiful Lincoln National Forest.

Returning to Texas to be closer to family has been quite the challenge. There’s been a lot of hurdles to jump. I’ve sold property and some pretty cool cars to make this happen. With almost a year in the making, we can see the light at the end of the tunnel. I get asked daily when are we going to open. I’ve been real reluctant to put a date on it. But as of this moment I feel comfortable saying November 7th. If we can make it sooner, we will.

if you’re interested in joining a magical team, stay tuned! We’ll be announcing a ‘casting call’ soon! I have an amazing team in Cloudcroft and we’re looking to do the same here in Johnson City. I’ve always said that the food is only about half of the experience. What I dream of simply can’t be achieved without an extraordinary cast of characters!

And speaking of an amazing team, I’d like to thank my Cloudcroft crew for taking such good care of the mountaintop location. And thank you for the support you show them. We’re seriously entertaining bringing them down for our opening weekend in the Texas Hill Country! In the meantime, if you’re looking for me I’ll be down in Texas. 😁

A big shoutout and a thank you to the Johnson City, City Council. They passed our variance for our sign! They even gave their blessing on the ‘Burma Shave’ signs! There was one hold out, so it was approved 4-1. I have to give Gracie Jo some credit, she wrote my speech for the council. Now… let’s get this joint open. How does 11/7 sound?

Well, tomorrow evening I’ll be going before the City Council to see if they’ll grant me a variance for my signs. Wish me luck!

Honestly, I wasn’t expecting a problem with my rooftop sign, especially since I’m outside the city limits. But if they don’t like the rooftop sign, I’m guessing they probably won’t be too crazy about my “Burma Shave” style signs either. 😂

You see, I have almost 600 feet of highway frontage before you get to my entrance. Jay, my sign guy from Blackout Signs, came up with this really cool idea: a series of Burma Shave-style signs spaced about 100 feet or so apart, leading people down the highway to our driveway.

The property is pretty well hidden by the trees, so I thought it was a clever—and hopefully fun—way to let folks know where we are. Each sign has a little rhyme that leads you to the next one.

I’d love to hear what you guys think. Maybe you can come up with a better rhyme as well! We could even change them out every so often and keep people guessing.

Of course… that is, if the City Council approves them. 😏

I made it back to the Texas Hill Country last night from Cloudcroft, and what a crazy-busy weekend it was! A huge thank you to everyone who stopped by and shared a meal with us.

One of my favorite things about what we do is seeing big families gathered around a table—and even better, watching complete strangers sit down together, sharing a table, and enjoying a good meal. There’s just something special about that.

While I was at the Fredericksburg Trade Days, I met Glenn, who builds incredible handcrafted tables from reclaimed longleaf pine. The wood he uses came from a 100-year-old Hill Country home that had been demolished. I was blown away by his work, so naturally I had to ask him, “What’s the longest table you’ve ever built?”

He said, “16 feet.”

Well… I’m a pretty competitive guy. So I asked, “Think you could make me one that’s 16 feet 1 inch?” 😁

And he did.

But the best part of this table isn’t even the tabletop. The beam connecting the legs came from an old gas station my dad built back in the ’60s—a place he worked out of for 30 years.

So this table has a little bit of Hill Country history, a little bit of my family’s history, and hopefully a whole lot of memories still ahead.

I can’t help but wonder… who will be the first to sit down at it, share a meal, and become part of its story?

would be if I had my old car back for the car show this weekend in the village of Cloudcroft.

It takes a lot of time to build something that operates like a machine. My awesome friend and brother;
Mad Jack is doing that right here in Cloudcroft NM.

Seems I always get to learn from the best.
They have built a team and become a family working in synchronicity to provide a memorable meal to a multitude of other families.

What a wonderful Labor Day! All of us here at Mad Jack’s Bbq are wishing you and your family a wonderful day! Well… I have good news and bad news. Let’s start with the good! We smoked an all time record of our giant ‘Dino’ beef ribs last night, along with a crazy amount of pork ribs! The bad, we’re so short on help today that we may not have sandwiches or our popular baked potatoes. We have a back up that may make it in to help. Not good news on one of our busiest days of the year. But we’ll make it!
